Yesterday I posted in #FoodiesBeeHive about the difference, if any, between farm fresh and store bought eggs.
I did a test with boiling the eggs (because I am often very lazy and boiling eggs is pretty easy). It was pretty inconclusive as far as differences. Here's yesterday's post if you're interested.
Moving on to my second test: Fried eggs.
So we, again, used a store bought white, a store bought cage-free brown, and my friend's very obvious farm fresh egg.
From the start, the yolks are a tell-tale sign.
This white egg's yolk is barely yellow.
The cage-free from the store is already better looking!
I broke the yolk of the one from the farm, but it did make it easier to differentiate the 'non-white' eggs.
*Besides the yolks, there was a clear difference in the egg whites! I'm not sure it's obvious in the pictures but the egg white of the white eggs was very thick, almost like jelly. I'm sure that must have something to do with the time spent in storage and trucks and shelves before it even gets to my house to sit in the fridge for another week or so.
The white of the cage-free from the store is a bit thicker than the farm fresh but nowhere near as intense as the white one.
I think that's probably why the yolk broke on the farm raised one. I mean, I'm aggressive but it wasn't all me!
Once flipped, and on my plate I could also see a difference in the whites after cooking.

The farm egg white is so fluffy!! I mean...just a beautiful fluffy egg white!!
The cage-free is still nice, but not the papery thin delicate white like the one straight from the farm.
And, obviously that thick white from the white egg is still thick. Due to the thickness, too, it needs a little more cooking (unless you break up that white, like I tend to do) or else you get a very dry egg. YUCK!
The taste test.
You can tell, even after cooking, that the yolks are clearly different colors. That rich gold of the farm and cage-free eggs really exaggerate the paleness of the white egg.
As you can probably guess, the taste echos the richness of the color.
I love eggs. I am not opposed to store bought white eggs.
But you can definitely see and taste the difference when side by side. And honestly I think it was the difference in the texture of the egg whites that surprised me!
so...eggs...there they are.
