SAUCY CHICKEN STIR-FRY WITH NOODLES
Make recipe just before serving
160g chicken breast fillet
2tsp olive oil
1 clove garlic crushed
1 tsp chopped fresh ginger
1 tsp sambal oelek
half tsp curry powder
1 red pepper chopped
250g pkt fresh egg noodles
1 cup shredded cabbage
4 green shallots, chopped
½ tsp corn flour
¼ cup water
1 T soya sauce
Microwave chicken until tender, or fry chicken. Cool, cut into strips. Heat oil in pan, add garlic, ginger, sambal oelek and curry powder; cook until fragrant. Add pepper, noodles, cabbage, shallots and chicken, stir-fry until heated through. Stir in blended cornflour, water and sauce, stir until mix boils and thickens. Serves 2
