身为一个湖南人,在外面最念念不忘的就是家楼下那碗米粉。米粉店在湖南,是比夜宵摊还勤快的存在,早上最早拉开卷闸门的大多是米粉店。米粉是湖南人早餐的最高配置,其重要程度大概和美国人早晨的那杯咖啡一样。米粉里最重要的是浇头,湖南人叫码子,码子基本决定了一碗米粉的味道好坏。湖南人的米粉最常见的码子有杂酱,排骨,牛肉和三鲜。今天想和大家分享杂酱码子的做法:
- 准备好猪肉末,里面加生抽,白胡椒粉,鸡蛋一个和少量生粉搅拌均匀。
- 冷锅烧油(小火),加入郫县豆瓣酱翻炒,炒出红油后加入肉末炒散。
- 炒出香味后加入高汤(没有高汤用水代替)
- 大火烧开后转小火熬40分钟。
- 最后开大火收汁,加入盐,鸡精和酱油调味。就完成啦!

- Marinate ground pork with soy sauce, white pepper powder, an egg and some starchy flour.
- Stir fry the marinated pork with chili bean sauce.
- Add broth (or water) into the sauce
- Simmer for 40 minutes.
- Add some salt and soy sauce. It's done!
You can put the sauce on top of rice noodle, noodle or even rice!
