This one's a bit cheesy but we did one of those night in the desert things in Morocco. A guide takes you on camels into the desert, after a traditional dinner you spend the night tenting among the massive sand dunes and get up real early, like 4.30am get on some stinky camels and ride back the same way. Early as hell but the view was worth it!
