When daylight savings ended - summer began - yeah baby - salad time !!
Most of the time I love salad but of course in summer it's great to have salad. I had a girlfriend once who ate chicken salad for breakfast, lunch and dinner. Now I've never been that bad - but I do like a good chicken salad.
For the competition I used some unusual ingredients - my green base was kale and spinach. I really enjoy using baby spinach in my salads - gives such a nice taste. Other ingredients I used, tomatoes, onions, feta cheese, juliette carrot strips, cabbage strips, chunky cut cucumbers and capers which spiced up the taste. Dill cucumbers also do this if you don't have capers.
Cook the chicken breasts with olive oil and add himalayan salt and pepper and origanum.
When browned place warm chicken around the salad.
Cook up some noodles to complete the dish
The final plating - can be served separately - or all mixed together with the chicken and noodles
