Between the tree dropping apples before they're ripe and squirrels knocking them off, we have a lot of small under-ripe apples under the tree.
I collected all the apples and sorted them between good apples and ones that are fit for our compost pile.
These are mostly being thrown away. But what to do with the good ones? Make an APPLE SYRUP!
I inspect and wash the good apples and put them in a large glass jar and I measure an equal weight of sugar.
Then I pour some sugar on the apples!
I fill the entire empty cavity of the jar with sugar and seal it up.
The idea is that over time (about 3 - 4 months) as the apples break down, the juices mix with the sugar and dissolve into a syrup. That's what I'm hoping anyway!
The syrup can be added to carbonated water to make Apple Soda, or it could be used as an ice-cream topping. I'm hoping that the sour unripe apples and sugar will make a nice sweet/sour syrup.
As the months go by, we'll see how this progresses.
