Fresh berries are delicious on their own but if you’re looking for a way to dress them up, elegant lemon curd and biscuits are the way to go. Here, I’ve layered them with a luscious lemon curd to brighten their natural sweetness. This dessert is fantastic with its sweet and zesty flavours! I like to use a combination of raspberries and blueberries! Enjoy!
Ingredients
150 gr OR 2/3 cup sugar
1/2 cup fresh lemon juice - about 3 lemons ( 120 ml)
1/4 cup fresh orange juice - 60 ml ( half an orange)
6 large egg yolks
3 tablespoons butter, cut into small pieces
1 tbsp grated lemon zest
1 1/2 cups or 100 gr blueberries
1 1/2 cups or 100 gr raspberries
6-8 cookies ( any cookies you like)
Directions
Step 1 : In a small saucepan, combine lemon juice, orange juice, sugar and egg yolks, mic through over medium heat.
Step 2 : Heat to 180° C / 350 F or until thick (about 6 minutes), stirring constantly with a whisk, and then remove from heat.
Step 3 : Add butter and lemon zest, stirring until butter melts. Use a siv to straight your lemon curd mixture, so we don't get any lumps.
Step 4: Place your lemon curd in a jar and chill completely. Crush your biscuits into fine crumbs.
Step 5 : Arrange your dessert the way you like it. Spoon 2 tablespoons of lemon curd into each small cups. Top each serving with crushed cookies, 1 1/2 tablespoons blueberries and 1 1/2 tablespoons raspberries. Repeat layers of curd and berries. Enjoy!
