I bake this cupcake when I wait for my friends for tea. Simple and
tasty, orange juice, dried apricots and nuts are added to the dough.
To decorate, sprinkle with powdered sugar.
1 egg, beaten
175 g of sugar
25 g of butter, melt
200 g of flour
2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
150 ml of orange juice
100 g chopped nuts
175g dried apricots
Preheat the oven to 180 ° C.
Beat the egg with sugar, add butter, then sift the flour into the
dough, salt, soda, baking powder. Add orange juice and mix by hand or
mixer.
Dry the dried apricots and finely chop. If dry dried apricots, soak in
water for several minutes. Add dried apricots and nuts in the dough.
Put into a bread mold (or a small round shape) and bake for 1 hour, or
until the match comes out dry from the center of the cake. If the
muffin has not yet been baked outside, and the upper has already
become brown, you can cover it with a piece of foil.
