While visiting Ole Red, Blake Shelton's eatery and bar, in Orlando, I decided to try alligator for the first time. Listed on the menu as Bar-B-Que Gator Wings, this meal was concocted with a 24-hour brine / smoked alligator. It included Tishomingo potato salad and a Vinegar Slaw. The meal was complimented by an Orange Bar-B-Que Sauce.
Tishomingo is the largest city in Johnston County, Oklahoma. Therefore, I'm guessing this was an authentic potato salad recipe from this part of Oklahoma. In addition, Chief Tishomingo was one of the last Chickasaw Chiefs to be a full-blooded member of the tribe.
Last I checked, alligators don't fly, but neither do Buffalos. Even so, the pieces were cut to resemble wings and even tasted like chicken. However, there was a little more toughness to the meat of the gator than a chicken. Ole Red did a great job with the flavor and I am glad that I finally got to experience this type of big game cuisine!
