While I was working on the roasted potatoes, my better half was preparing some very tasty chicken quarters. And I am not exaggerating when I say tasty! She used a seasoning that I purchased at The Olive Basin in Lancaster County, Pennsylvania. The seasoning was called Rotisserie Chicken Seasoning, which I had an opportunity to check out the aroma during my purchase process. This rub contained salt, paprika, garlic, onion, pepper and citric acid. Most of these ingredients I use on my fried chicken.
I love meat when it is on the bone. I feel that it is tastier and more moist. Besides, when you cook boneless chicken breasts, you have to deal with those stubborn, chewy tendons. I hear that chicken cartilage, on the other hand, can be a delicious snack. Nonetheless, these chicken quarters beat any boneless chicken that I ever had.
