Oh dear, sweet avocado toast.
Avocado toast, you are so pleasing to the eye and the tummy. With endless possibilities, you get my day started with a punch of protein and fiber. The crunch and chew of toasted bread topped with creamy smooth avocado forms the canvas upon which so many fabulous combinations of foods ought to be situated.
So you've become a bit of a cliché. It won't keep me away dear friend. I've loved you since Alton Brown announced that his favorite sandwich was avocado toast topped with sardines and parsley. I ate that sandwich more times than I can count when I was an impoverished graduate student.
And continue to do so to this very day.
Here's my all time favorite, typically for breakfast:
- Two slices of toasted multigrain seeded bread
- Half to 2/3 of a perfectly ripe avocado
- A few shakes of chili lime seasoning (or tajin if you have it)
- A few shakes of everything bagel seasoning (sesame seeds, poppy seeds, garlic, salt, and onion)
- 2 fried eggs
- Several spritzes of fresh lime juice

With a big cup of iced coffee, this really can't be beat.
