Breakfast Yogurt Parfait That are Perfect for Busy Work Weeks
If you're anything like me, you love to start the day with a delicious breakfast. If you're like me, you also love to spend as little time as possible cooking it. I came up with this recipe to kill those 2 birds with one stone. It is a breakfast that will provide protein, carbs, sweetness and freshness, while also tasting super duper delicious!! The best thing about these is that they can be made ahead and store in the fridge up to 5 days. So you can essentially make 5 on Monday and have a breakfast every day of the work week. I provide 2 of my favorite combinations, but the combos are only limited by your imagination(and taste buds!). So let's get started:
Very Berry Parfait
Ingredients:
1/2 C of plain yogurt(sweetened to taste)
1/2 C of Granola
1/3 C Berries
1 TBS of strawberry preserves
Instructions:
- Wash and dry the berries
- Layer half the yogurt alternately with granola and berries
- Top with preserves
- Enjoy! :)
Pumpkin Pie Parfait
Ingredients:
1/2 C Yogurt(sweetened to taste)
1/2 C Granola
1/3 C Pumpkin Puree
1 Tbs Almonds
1/8 Tsp Cinnamon or pumpkin pie spice
Optional: 1 Tbs raisins
Instructions:
- Mix pumpkin puree and cinnamon until combined
- Layer yogurt, granola, almonds, and puree alternately ending with granola.
- Enjoy! :)
