INGREDIENTS:
- Black eyed beans (500 g)
- Habanero pepper (3/4)
- Onions (2 large/3 medium-sized)
- Crayfish (2tsps to 1Tbs)
- Salt (to taste)
- Red bell pepper 'tatashe' (2)
- Vegetable oil (1Tbs)
- Stock cubes/bullion cubes
METHOD
Put beans in water (room temperature) and let it soak for about 5 minutes. Remove beans from water and put in a mixer blender. Add water to beans in the blender in order that the water level passes that of the beans. Pulse blender for 2-3 seconds. Remove content from blender. Wash beans until all the husk leaves and it becomes clean and white. After washing and dehusking beans (in water), run clean water into the beans and let it soak for about 1 hour. When the beans would have absorbed enough water, put in a blender, add onions (cleaned), habanero pepper, red bell pepper, crayfish. Blend all together. Pour content of blender into a bowl, add salt, stock cubes and vegetable oil. When batter is ready, pour into little greased heat resistant plastic bowls and steam for about 1 hour. Remove them from steam. Voila! Moin- moin is ready! Enjoy it with steamed corn pudding or steamed millet pudding.
