1/2 x 180g black chocolate block
2 tablespoons thickened cream
Chocolate mousse 3 x 62g
415g can black cherries without stone
380 g of unfilled chocolate sponge cake
2 tablespoons roasted coconut chips
1/2 cup whipped cream, whipped, extra
. Method
- Step 1 : Place the chocolate and cream in a microwaveable bowl. Microwave on HIGH (100%), stirring with a metal spoon, for 30 seconds to 1 minute or until melted and smooth. Put aside.
- Step 2 : Whisk the mousse in a bowl for 30 seconds or until smooth. Drain the cherries by reserving 1/3 cup of syrup. Finely chop the cherries.
- Step 3 : Using a serrated knife, cut each sponge cake in half. Place 1 half of cake on a serving plate. Brush the cake generously with the reserved cherry syrup. Garnish with 1/3 froth and 1/3 chopped cherries. Repeat the overlay, ending with a layer of cake.
-Step 4 : Sprinkle the cake with a chocolate mixture and garnish with remaining coconut chips and cherries. Serve with whipped cream.
