QUICK FOCACCIA IN 5 MINUTES
Ingredients
2 eggs
Pinch of paprika
Pinch of black pepper
¾ cup buttermik or water
100 g shredded cheese
1 ¼ cups flour
1 tablespoon of baking powder
1 tablespoon of fresh thyme leaves or (dried thyme)
1 tablespoon of Zaatar
2-3 tablespoons olive oil
Instructions
- In a medium bowl whisk the eggs with paprika and black pepper. Pour in the buttermilk or water, add fresh thyme, shredded cheese and give the batter a quick mix.
- Add the dry ingredients, all purpose flour, baking powder, zaatar and a pinch of salt.( If you add the zaatar don't add salt because it's already salted).
- Stir all together, until just combined. It's okay if there are a few lumps; overmixing can make the bread tough.
- Heat 2 - 3 tablespoons of olive oil in skillet or frying pan over medium-low heat. Pour the batter into the skillet making a large bread loaf.
- Cover the skillet with a lid to trap the heat. This will help the bread cook through evenly.
- Cook the bread on medium-low heat for about 3-5 minutes or until you see bubbles forming on the surface and the edges begin to set.
- Flip the bread using a flat plate. Continue to cook, uncovered, for another 3-5 minutes, or until the bread is golden brown on both sides and cooked through. You can check for doneness by inserting a toothpick into the center; it should come out clean when the bread is done.
- Remove the bread from the pan, let it cool for a few minutes, and then slice it into pieces.
