Hi steemians, welcome to a new week full of magic things happening to all you and me... of course!!!.
This Time I´ll show how to make this easy, delicious and nutritive cream from potatoes and mushrooms, in order to participate in FRUITS AND VEGGIES MONDAY COMPETITION by @lenasveganliving, hosted by @plantstoplanks.
Ingredients for two portions:
- 150 g of potatoes.
- 150 g of mushrooms. I used oyster and eryngii mushrooms.
- two cups of soy milk.
- two spoons of finely chopped coriander.
Those are the mushrooms used, from my own crop.
This are the chopped ingredients redy to use:
Procedure:
- Boil the potatos and mushrooms in one cup of water during ten minutes.
- add the soy milk, and boil for 20 minutes more, reduce fire to medium during the last ten minutes. Maybe you need to boil a little more, until you obtain a creamy consistency.
- Add salt to taste.
- Mix the coriander and enjoy.
This is the cream boiling, almost ready:
This crem is not only so yummy, but also very, very nutritious. From a 250 g portion you obtain:
- High protein content: 15-20%
- Carbohydrates: 35-40%
- Fat: almost Zero%
Also you obtain functional molecules that enhance your health:
- Anticancer Beta-glucanes from soy and mushrooms,
- Antioxidants like ergothioneine from mushrooms.
- Cholesterol regulator statins from mushrooms.
- Dietetic fiber, to good digestion.
- And many, many minerals: Iron, selenium, magnesium, calcium, etc, etc.
