It seems bitters are something that many peoples leave out of their diet these days. The sad thing is, bitters are so super important for digestions and overall health. Bitters stimulate bile (in the gallbladder) which aid in digesting fats. They also help to support the liver, act as a mild diuretic which helps cleanse the blood and help reduce cravings to name just a few benefits. In addition, most bitters are nutritional powerhouses, loaded with nutrients.
Some ideas of bitters you could incorporate into your diet are kale, arugula, swiss chard, mustard greens, chicory, dandelion, mizuna, escarole, nettle, rapini, tatsoi, turnip greens, watercress, radicchio, frisee, chamomile, sorrel, mint, amaranth, ginger, artichokes, cauliflower, rosemary, lovage, and sage to name a few.
Take note, however, if you have constant heartburn, you may want to steer clear of bitters as it does increase the production of hydrochloric acid which can exacerbate the upset stomach.
Here in our daily harvest basket, we harvested some purple mustard greens, chicory, red-veined sorrel, and mizuna to add some bitters to our salad. When mixed with fresh tender lettuce, cucumbers, some salty black olives, crunch sourdough seasoned croutons, etc, it really helps balance the bitter flavors. Top it with a nice avocado oil and vinegar (or balsamic vinaigrette) salad dressing for further masking of said bitter flavors. We eat them so often that honestly we don't even really notice the bitterness and we actually enjoy them. We also harvested some fresh spearmint to infuse a glass gallon jug of water. Nothing beats a chilled glass of spearmint water alongside a fresh salad on a hot day of work in the yard.
