It is a magnificent day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our full time volunteers on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!
We made a quick and easy frittata feast today!
We had 2 kinds of frittata, garden salad, spaghetti squash, and quinoa with tomatoes. It was a delicious and substantial feast of wholesome, sustainable food!
Our daily feasting starts with a bright, abundant salad! We pick baskets of greens each day to use both for our salads and for making green juice. We grow greens all year round in our greenhouses, but we have fresh, tender young plants popping up all over the property now that it is spring time.
Today we made our salad with a variety of beet greens, collards, chard, frilly lettuces, arugula, and radish greens. Then we topped them with cucumber, grated carrots, peppers, onions, tomatoes, and a sprinkling of hemp seeds and sprouted sunflower seeds.
We made a yummy ham and cheese frittata with lots of veggies for our meat eaters! We used lots of eggs from our hens, parmesan cheese, chunks of ham, and sliced mushrooms, onions, and peppers. We sprinkled the whole dish with fresh herbs and more parmesan!
For our vegetarians, we prepared a colorful frittata with red, yellow, and orange peppers, mushrooms, red and green onions, and Swiss cheese. This one was especially popular tonight!
We steamed a spaghetti squash and separated the "noodles" with a fork, then we tossed it with some of the same veggies we used to fill the frittata. The heat from the squash softened the veggies just enough to retain some texture and plenty of flavor!
For another side dish, we boiled quinoa then mixed in some coconut oil and chunks of tomato! This dish had lots of protein and filling fiber.
It was another magnificent spread in the Garden of Eden!
We shared the meal in great company, and gave lots of thanks for this abundantly blessed life. It is our honor and pleasure to share food far and wide! Thanks for tuning into our feast today.

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!
