This type of lunch is one of the family's favorites so I don't hesitate to prepare it for them.

Espero que tengan un feliz inicio de semana y que sea muy próspera para todos, es un placer estar aquí para compartir con ustedes una receta de este almuerzo que he preparado el día de hoy, se trata de un filete mignon de cerdo al horno el cual es muy delicioso, un corte de carne muy tierno y jugoso y lo he acompañado con un delicioso puré de papa con cebolla caramelizada y tocino y una rica ensalada con aguacate.
Este tipo de almuerzo es uno de los favoritos de la familia así que no dudo en prepararlo para ellos.
-700gr of pork filet mignon fillet cut into medallions
-Salt and pepper to taste
-Bay leaves
-Olive oil
-1/2 yellow bell pepper
-1/2 Zucchini
-5 large potatoes
-150 gr of bacon
-1Onion
-5 cloves of garlic
-700gr de filete mignon de cerdo cortado en medallones

-5 papas grandes

How to prepare:
To prepare this meat we must season it with salt and pepper to taste and let it marinate for 1 hour in our refrigerator, so that the meat absorbs the flavor and stays fresh.
After this time we will heat a frying pan and add a little olive oil and a clove of chopped garlic to aromatize the oil, then we will place our meat medallions and seal it for 6 minutes on each side and then we will remove it.
Then in a tray I have placed some slices of zucchini and some strips of the paprika as a base salpimente and add olive oil then I have been placing the meat medallions with a bay leaf on top and I have placed it in the oven for 15 min this is because we like pork 🐷 with a good cooking.
Once the time has passed ⏲️ I have turned off the oven and left it there until serving time.
Modo de preparación:
Para preparar esta carne debemos sazonarla con sal y pimienta al gusto y dejarla marinar por 1 hora en nuestro refrigerador, para que la carne absorba el sabor y se mantenga fresca.
Luego pasado el tiempo calentaremos una sartén y agregaremos un poco de aceite de oliva y pondremos un diente de ajo picado para aromatizar el aceite luego colocaremos nuestros medallones de carne y lo sellaremos por 6 minutos de cada lado luego retiraremos.
Luego en una bandeja he colocado unas rodajas de calabacín y unas tiras del pimentón como base salpimente y añado aceite de oliva luego he ido colocando los medallones de carne con una hoja de laurel por encima y lo he colocado en el horno durante 15 min esto es porque nos gusta la carne de cerdo 🐷 con una buena cocción.
Una vez pasado el tiempo ⏲️ he apagado el horno y lo he dejado ahí hasta el momento de servir.

When the potatoes were ready, remove from the heat and remove the water, then mash the potatoes with a fork and add the butter.
Mientras se cocinaba la carne pelé las patatas, las troceé y las puse a cocer en una olla con agua y añadí un poco de sal.
Luego piqué el bacom en trozos pequeños, una cebolla en juliana y machaqué los ajos en un mortero.
Una vez lo tuve todo picado calenté la sartén y añadí el bacón hasta que se doró y soltó mucha grasa, entonces lo retiré y en esa grasa añadí el ajo y la cebolla y empecé a sofreírlos hasta que se caramelizaron, entonces lo apagué y lo retiré.
Cuando las papas estuvieron listas, retire del fuego y quite el agua, luego aplaste las papas con un tenedor y agregue la mantequilla.

A la hora de emplatar coloqué ensalada fresca de lechuga, tomate, pepino y rúcula, luego coloqué los calabacines que estaban en la parte inferior de la carne que estaban muy sabrosos y coloqué los medallones encima, también añadí el puré de patatas con cebolla caramelizada y bacon por encima y aguacate.
