In this post I will be sharing with you how I made some bean cake popularly known as Akara or Kosai. It is a widely consumed street food in Nigeria and some other parts of Africa and it can also be made in the home too. In fact, due to migration and all i feel like Akara can be found in every part of the world today.
It is a snack that is crispy on the outside and fluffy on the inside. The fluffy texture of your akara depends on how you are able to whisk it efficiently. Bean cake is made using either honey beans or white beans with ingredients of your choice which may include crayfish, eggs and so on but the major ones are scotch bonnet, red bell pepper and onions.
So, let me show you the step by step process of how I made some bean cake for my family which we enjoyed with some creamy custard.
Ingredients
2 cups of beans
1 medium onion
3 red bell peppers
Vegetable oil
1 seasoning cube
Salt
Step by Step
The first step is to peel the beans by soaking it for a few minutes and rubbing them between your hands to remove the back. Then rinse with plenty of water until you have a clean beans.
Next, use your blender to blend the peeled beans, onions and red bell peppers. Don't add to much water so that your mixture wouldn't be too watery.
Also, ensure it is very smooth.
Next, pour the blended mixture into a mixing bowl and add your seasoning cubes, and salt. You may slice some onions if you're interested.
Then use your spoon to whisk the mixture for about 5 minutes. This is key to making your bean cakes fluffy
In a frying pan placed on medium heat add some vegetable oil and scoop the mixture into the oil till you fill up the pan.
Flip to the other side after few minutes so that both sides can be golden brown.
Fry the remaining mixture in batches until you are done with all.
Serve your bean cake and enjoy while it's still hot with pap, garri, custard or bread.
