Today i would like to share the recipe of Boondi Raita. Well Boondi is the fried pearl size made up of chickpea flour, dip in the flavoured curd. Boondi is easily available in the market, for quick and easy recipes, better to buy the readymade boondi Packet. It is typically served as cooling dip served with indian breads like roti or partha even can be enjoyed with rice based cuisine like pulav or biryani. Although there are many types of raita, but Boondi Raita is my favourite one. When crispy boondi is deep in creamy curd and spices are added in it, it gives delicious Flavour and Taste.

Ingredients๐
โข ยฝ cup Readymade boondi.
โข 4-5 tbsp of Milk
โข 1 cup curd / yogurt
โข ยผ tsp cumin powder(jeera powder).
โข ยผ tsp kashmiri red chilli powder
โข Taste to Taste.
โข Green Coriander leaves for Garnish.
Process ๐จ๐ปโ๐ณ
Take a fresh Curd in a bowl, I prefer to have Homemade Curd, as Readymade packs contains preservatives which is totally unhealthy.
whisk and mix making sure a smooth silky consistency curd is attained.
Add the cumin(jeera) seeds powder. This fresh cumin seeds powder, just simply roast the cumin seeds untill it get dark bown in colour then crush it in mortar and pestle for amazing flavours and Aroma.
Add salt to taste.
now add the red chill powder, it optional if you don't like spicy then don't add even you can add chopped Green chilli.
Keep inside the refrigerator to cool down, when you have to serve then put the crispy Boondi inside the Creamy curd. If you add boondi much before then it will become soggy, so my advice to add boondi when you serve it in your meal for crispy boondi texture.
Mix it well. To maintain the consistency of curd you can add milk. Don't add the water.
Now Garnish the Raita with Green Coriander leaves. It is just perfect combination of Crispy Boondi Dipped in the Creamy texture curd. You can pair it with Partha, Biryani or Pulao. Even you can have it in your
Lunch/ Dinner.
