Hoy estoy por acá para contarles la historia de como hago los Spaguettis.
Nota: Esto no pretende ser una receta, por eso no encontrarán aquí la estructura clásica de las recetas a las que pudieran estar acostumbrados. La intención más bien será lograr que esta publicación sea una especie de paseo por el proceso que yo sigo para cocinar mis spaguettis.
Nota2: Esta manera de cocinar los Spaguetti puede que algunos no lo consideren la manera "correcta" o quizás si, nolo sé la verdad, pero es la manera que me hace feliz. Espero que lo disfruten tanto como yo hacerlos... Y comerlos😅.
Esta historia comienza con un buen corte de pierna de cerdo (más historias deberías iniciar así, ¿no lo creen?)
La idea era convertir este corte en carne molida (picadillo para los paisanos), porque como me gusta saber que tiene la comida que hago decidí moler mi propia mezcla de carnes.
Y es que ese corte, así solito me pareció que iba a ser un poco aburrido, por eso decidí que lo iba a acompañar con un pedazo de jamón cocido que hice la semana pasada y del que me quedaba un cachito todavía en el refri.
Así que los piqué en cubos medianitos para facilitar la molienda,
peeeeeroo, ya que estaba pensé a esto le falta un poco de sabor, así que vinieron al rescate los confiables de siempre, ajo y cebolla blanca.
Así las cosas incluí dos dientes de ajo y media cebolla blanca....
Y también 1/4 de ají pimiento o chile morrón (dependiendo de que parte de latinoamérica me lean). Pero a este se me olvidó hacerle foto, 😬 lo siento.
Con esto listo, monté mi maquinita casera (y manual... tremendo ejercicio) y empecé a moler todo junto.
Lo que ven amarillo en la molida es el pimiento.
Así que molí, y molí y ya que casi había terminado...
¡Hayyyy! ¡las aceitunas!
Corre (con las manos sucias y la mirada reprobatoria de cierta compañera de vida) a buscar las acietunas para moler también.
Total que así quedó mi mezcla.
Esta mezcla la pasé a un tupper (para limitar, que no evitar que se regara) y amasé bien para integrar todos los ingredientes.
Una vez integrados reservé la molida por unos minutos y me dediqué a la siguiente parte del asunto.
Lavé y pelé tres champiñones y los corté en rebanadas bien finas, así 👇
Yo decidí usar el pedúnculo también, pero si lo prefieres lo puedes desechar, es a tu gusto.
En un sertén puse a calentar aceite y salteé los champiñones a fuego alto. Luego los reservé para el emplatado.
En este mismo sartén y con el mismo aceite, también a fuego alto puse mi molida a sellar
Y la dejé cocinar hasta que comenzó a dorarse.
Es posible que si haces la mezcla como yo la hice la molida suelte bastante jugo, lo que yo suelo hacer es dejar que la carne se cocine en su jugo.
Hasta que quede así.
Y ahora es el momento de hacer la salsa.
Puse vinagre, sal, aceite y unos 300 g de puré de tomate condimentado, como el que está acá arriba junto a la molida ya cocinada y en lugar de agua un poco de la salmuera de las aceitunas.
Lo dejé cocinar al fuego alto y cuando comenzó a hervir le puse un poco de vino blanco de cocina.
Dejé que se cociera la salsa y mientras, aproveché y puse una olla con agua y sal a hervir. Luego aproveché que la salsa aún estaba cociendose y me puse a rallar el queso.
Unos 250g de queso tipo manchego.
Ya que terminé de rallar el queso, la salsa estaba casi lista,
así que le puse un poco de pimienta negra, las aceitunas que me quedaron de la molienda y dejé reposar.
Y así me quedó
Ya para este momento el agua estaba hirviendo así que puse unos 500g de spaguettis de estos 👇a cocer.
Así, con los spaguettis enteros
Dejé cocer hasta que estaban "al dente"
Retiré el agua sobrante
Y ya que estaba todo listo tocaba emplatar, puse los spaguetti, la salsa y encima el queso rallado y los champiñones salteados que le dan un toque algo dulce.
Y así quedó.
Listo para disfrutar.

Note 2: Some people may not consider this the “right” way to cook spaghetti, or maybe they do, I don't really know, but it's the way that makes me happy. I hope you enjoy it as much as I enjoy making it... and eating it😅.
This story begins with a good cut of pork leg (more stories should start like this, don’t you agree?).
The idea was to turn this cut into mince meat ("picadillo" for the folks back home), because since I like to know what’s in the food I make, I decided to grind my own meat blend.
And honestly, that cut all by itself seemed a bit boring, so I decided to pair it with a piece of cooked ham I made last week, of which I still had a little bit left in the fridge.
So, I cut the pieces into medium size cubes to make grinding easy
But... since I was at it, I thought, this needs a bit more flavor, so in came the trusty old duo to save the day: garlic and white onion!
So, I included two garlic cloves and half a white onion
And also 1/4 of a bell pepper. But I forgot to take a picture of it 😬... sorry."
With everything ready, I set up my little (and manual... what a workout) grinder and started processing it all together.
The yellow bits you see in the grind? That's the bell pepper."
So I ground and ground, and just when I was almost done...
Oh nooo! The olives!
So off I run (with dirty hands and under the disapproving gaze of a certain life partner) to grab the olives and grind them up too.
And this is how my final mix turned out!
I transferred this mix into a Tupperware (to minimize spills, not prevent them entirely) and kneaded it well to blend all the ingredients together.
Once blended I reserved it for a few minutes and I moved on to the next part of the process.
I washed and peeled three mushrooms and cut them into very thin slices, like this👇
I decided to include the stems too, but it is ok if you decided not to use them, to your liking.
I heated oil in a frying pan and sautéed the mushrooms over high heat. Then I set them aside for plating.
In the same frying pan and oil, also at high heat I sauted my mince meat.
I let it cook until it started to brown.
Is possible that if yoy decide to use this same method, the mince meat release some juice. What I normally do is let it cook in this juice.
Until it looks like this.
And now is the time for the souce
I put vinegar, salt, oil and about 300 g of seasoned tomato souce, like this one up there 👆into the already cooked mince meat and intead of water a bit of brine from the olives,
I let it cook at high heat and when it started to boil I put a splash of cooking white wine.
I let the sauce to cook for a little longer and used that time and put a pot with water and salt to boil
Then I make the most of the cooking time and grated the cheese
About 250g of manchego type cheese.
Once I finished grating the cheese, sauce was almost ready,
So I put some black pepper, the remaining olives and let it rest.
This is how it turned out
By now, the water was already boiling, so I put 500g of spaguettis of these 👇to cook.

Once everything was ready it was time for plating, I put the spaguetti, the sauce and on top the grated cheese and the sauted mushrooms, which gives it a small touch of sweet flavor.
