On the other hand, the recipe that I want to share today is about Healthy Cupcakes, made based on raisins, oats and honey. For the decoration (because without decoration they wouldn't be cupcakes 😅), I made a cream cheese and honey frosting.
I tell you that this recipe is as healthy as possible, I have not used wheat flour or similar, but rather Oat Flour. To sweeten, I have taken advantage of the fact that raisins are naturally sweet, and for this reason I have blended them first to form a kind of "paste" that will spread sweetly in the cupcake mixture. In a way to complement the sweetness, I have added about 3 tablespoons of pure honey, this is only to better stabilize the sweetness and combine the characteristic flavor of the ingredient. However, it is not specifically limiting and if you do not have honey, it can be ignored.
As for the moist part of the dough for the cupcakes, I have used only a couple of tablespoons of Butter without additives or preservatives, it is really very delicious and far from the marked flavor of common margarine. As another liquid, I have used common powdered milk and diluted in water, I would have wanted to use coconut milk, but I had not yet prepared it in an artisanal way 😅.
In the photo, there is my hand somewhat smeared from the cream cheese frosting. About this one, I can say that it is very soft in texture and must be refrigerated. Well here in my town the heat is "strong" and if it is left out of the fridge, it may become deformed like ice cream. As for the combination of flavors, I find it totally delicious, it is a very rich combination. The contrast of flavor between sweet and a touch of salty frosting, play an ideal contrast with the crumb; it is really nice.
One of the things that I liked about this recipe is that its crumb is not dry, as opposed to most high-fiber products that I have consumed. I think one of the things that plays a part in this is the exact baking time, not letting them dry out or baking too long. Another of the things that I like about this dessert is its well-distributed raisin flavor; making the paste from them makes them quite even when spread. Preparation
- We will take the raisins and place them in the grinder or in the blender. Add a little milk and blend for a few minutes to form a paste. Place the resulting pasta in a bowl.
- Add the butter and the egg. Mix until well integrated. We add vanilla to taste, about a couple of tablespoons.
- Add the baking powder and 3 tablespoons of honey, mix between each integration. Add the oatmeal and we will stir, while we add a little milk, so that the mixture is not so "heavy".
- After mixing, we will have a semi-heavy dough. We portion inside the trainers with their respective mold and we will bake at 180 degrees. For approximately 15 minutes, until a toothpick inserted in the center comes out clean. Tip: After we observe that they are "drying", it is time to watch so that they do not bake extra. After they are ready, we will let them cool until they reach room temperature. Let's start preparing the Frosting: We put the cream cheese in the bowl to start beating, until we achieve a creamy texture.
- Add a tablespoon of honey. And optionally, a little vanilla. Mix until well integrated and refrigerate for 15 minutes. Then, we place the frosting in a bag, with the nozzle of our choice and decorate.

These cupcakes are ideal for a mid-afternoon snack, in my case I made them for a snack before going to exercise. I have eaten one, and reserved the others to eat one for breakfast tomorrow with a cup of coffee without sugar.

Por otro lado, la receta que quiero compartir hoy, se trata de unos Cupcakes Saludables, elaborados en base a pasas, avena y miel. Para la decoración (porque sin decoración no serían cupcakes 😅), he hecho un frosting de queso crema y miel.
Les cuento que esta receta es lo más saludable posible, no he usado harina de trigo ni similar, sino más bien Harina de Avena. Para endulzar, he aprovechado que las pasas son naturalmente dulces, y por ello las he licuado primero para formar una especie de "pasta" que se esparcirá dulcemente en la mezcla de los cupcakes. En manera de complementar el dulzor, he agregado unas 3 cucharadas de miel pura, esto solo es para estabilizar mejor el dulzor y combinar el sabor característico del ingrediente. Sin embargo, no es específicamente limitativo y siendo el caso que no dispongas de miel, se puede obviar.
En cuanto a la parte de humedad de la masa para los cupcakes, he usado solo un par de cucharadas de Mantequilla sin aditivos ni conservantes, es realmente muy deliciosa y alejado del sabor marcado de la margarina común. Cómo otro líquido, he usado leche en polvo común y diluida en agua, hubiera querido usar una leche de coco, pero aún no la había preparado de manera artesanal 😅.
En la foto, esta mi mano algo empatucada del frosting de queso crema. Sobre este, puedo decir que es de una textura muy suave y debe estar refrigerado. Bueno aquí en mi pueblo el calor es "fuerte" y si se deja fuera de la nevera, puede que se deformen como helado. En cuanto a la combinación de sabores me parece totalmente delicioso, es una combinación muy rica. El contraste de sabor entre dulce y un toque de salado del frosting, juegan un contraste ideal con la miga; es muy agradable.
Una de las cosas que me gustaron de esta receta es que su miga no es seca, esto como un opuesto a la mayoría de productos altos en fibra que he consumido. Creo que una de las cosas que juegan un papel en esto es el tiempo exacto de horneado, no dejarles secar o hornear de manera prolongada. Otra de las cosas que me agradan de este postre, es su sabor bien distribuido a pasas, elaborar la pasta de las mismas, las vuelve bastante equitativas al esparcirse. Si no me creen, miren nada más la miga interior...🤤

- Tomaremos las pasas y las colocaremos en el triturador o en la licuadora. Añadiremos un poco de leche y llevamos a licuar unos minutos, para formar una pasta. Colocamos la pasta resultante en un bowl.
- Añadiremos la mantequilla y el huevo. Mezclamos hasta integrar bien. Agregamos vainilla al gusto, aproximadamente un par de cucharadas.
- Agregamos el polvo de hornear y 3 cucharadas de miel, mezclamos entre cada integración. Añadimos la harina de avena e iremos removiendo, mientras le colocamos un poco de leche, para que la mezcla no esté tan "pesada".
- Después de mezclar, tendremos una masa semi pesada. Porcionamos dentro de los capacillos con su respectivo molde y llevaremos a hornear a 180 grados de temperatura.
