Bad weather in Ushuaia could ruin my trekking afternoons, but they were the perfect setting for spending time in the kitchen. Evenings were also the time when there weren't as many guests, so the kitchen was fully available to me. That's when I took the opportunity to relax a little and try to make something delicious to share with some guests when they returned from their hikes. Luckily, the recipes almost always turned out well, but the day I finally decided to make zingarella, I received many compliments 😃.
Los días de mal clima en Ushuaia podrían arruinar mis tardes de trekking, pero eran el escenario perfecto para pasar un momento en la cocina. Las tardes también eran el momento en el que no habían tantos huéspedes, por lo que la cocina estaba totalmente disponible para mí. Era entonces cuando aprovechaba para relajarme un poco e intentaba hacer algo delicioso para compartir con algunos huéspedes cuando volvieran de sus paseos. Por suerte las recetas casi siempre salían bien, pero el día que finalmente me decidí a hacer la zingarella recibí muchos elogios 😃.
A few days ago, Silvia, the sister of the hostel owner, had told me about a dessert her mother used to make when they were children. It was zingarella, a dish that includes sponge cake, flan, and green apple. She said it had been a long time since she'd eaten that, and that's when I got the idea to make one to share with her and whoever else might be there that day. She was the one who shared the recipe she had saved with me, so it was very easy to prepare, following every step.
Algunos días atrás Silvia, la hermana del dueño del hostel, me había contado sobre un postre que hacía su mamá cuando ellos eran niños. Se trataba de la zingarella, una preparación que incluye bizochuelo, flan y manzana verde. Dijo que hacía mucho tiempo que no comía eso, y ahí surgió mi idea de hacer una para compartir con ella y con quien estuvieramos presentes ese día. Fue ella quien me compartió la receta que tenía guardada, así que fue muy sencillo prepararla siguiendo cada paso.
First, we had to make caramel in a flan mold. There are many ways to do this by burning the sugar, but for me the best is to place the mold with a layer of sugar directly in the oven. This way, the sugar melts evenly, and when it reaches the desired color, simply remove it and let it cool. Then, we had to make the flan mix by mixing milk, sugar, eggs, and vanilla extract. Everything is quickly prepared with a whisk, and then it's poured into the mold. The next step is to place thin slices of green apple on top of this mixture: they're so light they'll float in the liquid.
En primer lugar, había que hacer caramelo en un molde para flan. Hay muchas formas de hacer eso quemando el azúcar, pero para mí lo mejor es dejar el molde con una capa de azúcar directamente en el horno. Haciendo esto, el azúcar se va fundiendo parejamente y cuando obtiene el color deseado, solo se retira y se deja enfriar. Luego, hay que hacer la mezcla para el flan mezclando leche, azúcar, huevos y esencia de vainilla. Con el batidor todo se prepara rápido, y luego se vuelca en el molde. El paso siguiente es colocar finas rodajas de manzana verde sobre esta mezcla: son tan livianas que flotarán en el líquido.
Next, prepare the cake mix by mixing self-rising flour, sugar, eggs, and vanilla extract. Pour this second mixture into the pan and bake in a double boiler in the oven. This preparation took about an hour to complete over very low heat, but the baking was even. After 40 minutes, you could start to smell the sweetness, but make sure everything is cooked by piercing the mixture with a knife until it comes out clean.
A continuación, hay que preparar la mezcla para el bizcochuelo mezclando harina leudante, azúcar, huevos y esencia de vainilla. Se vuelca esta segunda mezcla sobre el molde y todo se cocina a baño maría en el horno. Terminar esta preparación tomó como una hora a fuego muy bajito, pero la cocción fue uniforme. Ya a los 40 minutos se empezó a sentir el olor dulce, pero hay que asegurarse de que todo este cocido pinchando la mezcla con un cuchillo hasta que este salga limpio.
Once baked, you have to wait for it to cool, and the crucial moment is when you're going to unmold it. Every time I make something with a caramel mold, I'm afraid everything will stick, but most of the time it turns out well. Luckily, this time was no exception, and it also turned out amazing. The dessert already looked delicious, and I couldn't wait to try it ❤️.
Después de cocido, hay que esperar que se enfríe y el momento crucial es cuando lo vamos a desmoldar. Cada vez que hago alguna preparación con molde acaramelado tengo miedo de que todo se haya quedado pegado, pero la mayoría de las veces sale bien. Por suerte, esta vez no fue la excepción y también salió increíble. El postre ya se veía delicioso y estaba ansiosa por probarlo ❤️.
By following this recipe exactly, I was able to achieve a smooth, yet not overly sweet dessert. The combination of flan, sponge cake, and green apple turned out very well. Since the sugar level wasn't too high, I was tempted to eat a few slices. As guests arrived, each one ate a slice, and everyone enjoyed this dessert. Of course, the opinion that mattered most to me was Silvia's, who luckily also enjoyed this preparation. I hadn't met her before, so I was happy that she shared this recipe with me.
Siguiendo al pie de la letra esta receta, pude obtener un postre suave y no empalagoso. La combinación de flan con bizcochuelo y manzana verde quedó muy bien. Como el nivel de azúcar no era muy elevado, daban ganas de comer unas cuantas porciones. A medida que los huéspedes fueron llegando, cada uno comió una porción y a todos les gustó este postre. Por supuesto, la opinión que más me importaba era la de Silvia, quien por suerte también estuvo a gusto con esta preparación. Yo no la conocía, así que me alegré de que me haya acercado esta receta.
The "bad" thing about cooking something delicious is that they want you to do it all the time. During my remaining stay in Ushuaia, I made zingarella a few more times, and each recipe turned out as good as this one. Spending time in the kitchen entertains me, and when it's something to share, it's also fun, because I like knowing that others enjoy what I'm making. Plus, none of the guests refused a good slice of flan cake to go with their afternoon tea: they wouldn't have found such attention at any other hostel 😃!
Lo "malo" de cocinar algo rico es que después quieren que lo hagas todo el tiempo. Durante mi restante estadía en Ushuaia preparé zingarella algunas veces más, y cada receta salió bien igual que esta. Pasar tiempo en la cocina me entretiene, y cuando es algo para compartir también, porque me gustaba saber que los demás disfrutan lo que hago. Además, ninguno de los huéspedes se negaba a una buena porción de torta-flan para acompañar con su té de la tarde: ¡en ningún otro hostel hubiesen encontrado una atención como esta 😃!
