If you like courgette, you will surely like this recipe for delicious pancakes with cheese and egg. In my case, I love this vegetable in stews and I find it super healthy to use it in pancakes that can be combined with a good dip, either garlic or avocado, which are my favourites. This time I only made the pancakes as I didn't have the ingredients to prepare the dips I mentioned. This is a quick and tasty recipe. I'll show you how to prepare it.

En mi caso este vegetal me encanta en los guisos y me parece súper saludable poderlo utilizar en tortitas que pueden ser combinados con un buen dip, ya sea de ajo o aguacate que son mis preferidos. En esta oportunidad solo realizó las tortitas ya que no tenía ingredientes para la preparación de los dip que mencioné. Está es una receta rápida y sabrosa. Te muestro su preparación.

To start this recipe, take 1/2 courgette with its skin on and grate with a cheese grater.

Para comenzar está receta, tome el 1/2 calabacín con su respectiva piel y ralle con ayuda de un rallador de queso.

Ahora agregue los dos huevos y procedí a unir con el calabacín rallado.

Then add the 100 grams of corn flour, together with the grated llanero cheese. Here I proceeded to knead all the ingredients until a dough was formed. Then I began to make little balls, to later shape them into pancakes and fry them.

Posteriormente coloque los 100 gramos de harina de maíz , junto con el queso llanero rallado. Aquí procedí amasar todos los ingredientes, hasta formar una masa. Allí comencé a realizar bolitas, para luego darle forma de tortitas y llevar a freír

I fried them in soybean oil and let them brown on both sides and set them aside until they cooled and could be eaten.

Lleve a freír con aceite de soya, y dejé que doraran por ambos lados y reserve hasta que enfriaran y poder degustar.
