Recuerdo que en una oportunidad les dije que mi situación de salud me llevó a convertir la comida en mi mejor medicina. Tengo aproximadamente diez años que me diagnosticaron con fibromialgia y desde entonces estoy medicada. Pero debido a que no he sentido mucha mejoría en este tiempo a pesar de estar tomando el tratamiento, en noviembre del 2023 tomé la decisión de cambiar mi estilo de alimentación e incorporar la actividad física a mi rutina diaria.
I remember once telling you that my health situation led me to turn food into my best medicine. I have been diagnosed with fibromyalgia for about ten years and since then I have been on medication. But because I have not felt much improvement in this time despite taking the treatment, in November 2023 I made the decision to change my eating style and incorporate physical activity into my daily routine.

Les cuento que en este año de cambios nada ha sido fácil con la alimentación. Eliminé de la preparación de mis alimentos todo lo que corresponde a procesados: harinas, azúcar, condimentos, aceites comerciales (llámese de maíz, soja y girasol), el pan, margarina, arroz y la pasta rara vez los consumo. Me hice amiga de la grasa de cerdo, yo misma la preparo y así me aseguro que no tenga ningún aditivo químico.

I eliminated from my food preparation everything that corresponds to processed foods: flour, sugar, condiments, commercial oils (corn, soybean and sunflower), bread, margarine, rice and pasta are rarely consumed. Consumo mucha proteína, vegetales, verduras y frutas, así como semillas de chía, linaza, ajonjolí, calabaza, incluso esta última con su concha, sopas con muchos vegetales y proteína. Lo que me ha costado mucho es bajar el consumo de lácteos.

La actividad física se ha convertido para mí en una obligación, me duela mi cuerpo o no realizo actividad física, incluyendo siempre pesas. El año pasado un doctor me dijo que no debía realizar ejercicios con pesas, sin embargo, le dije "si no realizo pesas no puedo ni agarrar un vaso con mis manos porque llega el momento en que no tengo fuerzas para hacer una actividad tan simple como esa".
Physical activity has become an obligation for me, whether my body hurts or not I do physical activity, always including weights. Last year a doctor told me that I should not exercise with weights, however, I told him “if I don't do weights I can't even hold a glass with my hands because there comes a time when I don't have the strength to do a simple activity like that”.
Hoy doy gracias a Dios y nuestro señor Jesucristo, por haberme dado la fortaleza para tomar esa decisión porque mi vida ha cambiado para bien, me considero "una mujer resucitada" en el buen sentido de las palabras, me rescaté y estoy feliz con ello.
Today I thank God and our Lord Jesus Christ, for having given me the strength to make that decision because my life has changed for the better, I consider myself “a resurrected woman” in the good sense of the words, I rescued myself and I am happy with it.
Acá les dejo la receta de carne con vegetales a mi estilo, por si se animan a practicarla. La carne prefiero que sea de res o pollo, queda muy deliciosa.

INGREDIENTES:
- 300 gr de carne de res
- 1 cebolla mediana
- 6 ajíes dulce sin semillas
- 1 y 1/2 taza de vainitas
- 3 cucharadas de grasa de cerdo
- 2 cucharadas de maicena
- 1 tomate grande
- 1 zanahoria pequeña
- Ajo a su gusto, a mí me gusta colocarle suficiente
- Sal a gusto
- Un toque de pimienta
- Un golpe de salsa de soja para darle color
INGREDIENTS:
- 300 gr of beef
- 1 medium onion
- 6 sweet chili peppers without seeds
- 1 and 1/2 cup of vanitas
- 3 tablespoons of pork fat
- 2 tablespoons cornstarch
- 1 large tomato
- 1 small carrot
- Garlic to taste, I like to add enough.
- Salt to taste
- A touch of pepper
- A dash of soy sauce to give it some color
PREPARACIÓN:
- Cortar todos los vegetales y reservar
- Cortar la carne en cubos pequeños y agregarle la maicena, pimienta y sal
- Picar el ajo y agregar a la carne
- En una sartén colocar la grasa de cerdo y sellar la carne adobada
- Retirar la carne del sartén y sofreír los vegetales, en el oriente del país los llamamos, aliños, hasta suavizarlos.
- Incorporar la carne al sofrito con la zanahoria y vainitas, mezclar y agregar el golpe de salsa de soja. Mezclar y darle una cocción de 5 minutos.
- Corregir sal y listo, queda delicioso.
Lo acompañé con verdura para mi esposo y batata para mí, junto a la ensalada de coliflor con brócoli y pasas que preparo, que también queda muy rica, esa receta ya se las publiqué el año pasado.
