VERSIÓN EN ESPAÑOL
Saludos para todos mis hiveamig@s, luego de un tiempo retirada por problemas de salud vuelvo con más anecdotas y más recetas para compartir con ustedes.
En esta oportunidad les dejo la receta de la sopa o sancocho de costillas de res, un plato muy sabroso de la gastronomía venezolana.
En el oriente del país es normal que le llamemos "sancochos domingueros", el cual aprovechamos a disfrutar en compañía de la familia y amistades.
Esta receta alcanza aproximadamente para alimentar entre 15 y 20 personas.
Ingredientes:
- 3 kg de costillas de res
- 3 kg de verduras surtidas (ñame, ocumo, yuca, chino y auyama)
- 0,5 kg de apio
- 1 plátano verde
- 3 jojotos limpios
- 250 gr de cebolla
- 150 gr de ají dulce
- 100 gr de ajo
- 100 gr de, cilantro, perejil y celery
- 10 litros de agua
- 20 gr de orégano fresco o seco
- Sal a gusto
- Pimienta a gusto
- 1 sobre de caldo deshidratado de pollo o res con fideos (en Venezuela le llamamos sopa continental)
Preparación:
- En 2 litros de agua ablandamos las costillas por 30 minutos en una olla a presión o en cocción normal, pendiente que no se sequen las costillas.
Me gusta realizar este paso la noche anterior porque así al enfriar la costilla solidifica la grasa y se la retiro.
- Parte de la grasa de la costilla, a gusto, por supuesto, la tomo para sofreír las cebollas, ajíes, ajos dejando una parte de éstos para licuar cuando esté culminando la sopa, cilantro, perejil y/o celery.
- Ese sofrito lo vierto en la licuadora y proceso quedando una pasta espesa.
- Coloco la olla donde realizaré la sopa o sancocho a fuego y vierto el sofrito procesado junto a las costillas y revuelvo, espero unos 5 minutos e incorporo los 7 litros de agua, dejo hervir.
Limpio las verduras, incluyendo el apio, quitándoles la piel, lavo y corto en porciones pequeñas, igual es a gusto el tamaño de estas.
Corto los jojotos en porciones pequeñas.
Retiro la piel al plátano verde y corto de forma diagonal.
- Ya hirviendo las costillas en el caldo que se formó, incorporo las verduras, los jojotos, el plátano verde y el sobre de caldo de res deshidratado, continua la cocción por 20 minutos más a fuego alto.
Incorporo el orégano, sal y pruebo, dejo hervir por 10 minutos más.
Retiro de la sopa los pedazos de auyama y apio.
La parte del ajo que dejé y algo de caldo lo vierto en la licuadora junto a la auyama y el apio y proceso, vierto esa mezcla en la sopa.
- Pruebo el punto de sal y observo si es necesario colocar el litro de agua que queda reservado. Si considero que no quiero la preparación tan líquida, entonces, no le incorporo el agua, porque es a gusto de quien está cocinando. Y está lista nuestra sopa o sancocho oriental.
No le incorporo la pimienta por cuidar el estómago de mi hijo y su esposa que también van a comer la sopa. La verdad que vale la pena prepararla porque queda bien rica.
Si quieren prepararla con un solo tipo de verdura o con dos, por el tema de los carbohidratos también es válido y pueden estar seguros que les quedará bien rica.
De todos modos, como es una preparación para tantas personas, la cantidad de carbohidratos a consumir no es exagerada.

In this opportunity I leave you the recipe of the soup or beef ribs sancocho, a very tasty dish of Venezuelan gastronomy.
In the east of the country it is normal to call it "sancochos domingueros", which we enjoy in the company of family and friends.
This recipe is enough to feed approximately 15 to 20 people.
Ingredients:
- 3 kg of beef ribs
- 3 kg of assorted vegetables (yam, ocumo, yucca, chino and auyama)
- 0.5 kg celery
- 1 green plantain
- 3 clean beans
- 250 grams of onion
- 150 grams of sweet bell pepper
- 100 gr of garlic
- 100 grams of cilantro, parsley, parsley and celery
- 10 liters of water
20 grams of fresh or dried oregano * 20 grams of fresh or dried oregano - Salt to taste
- Pepper to taste
- 1 sachet of dehydrated chicken or beef broth with noodles (in Venezuela we call it continental soup).
Preparation:
- In 2 liters of water we tenderize the ribs for 30 minutes in a pressure cooker or in normal cooking, pending that the ribs do not dry out.
I like to do this step the night before because when the ribs cool, the fat solidifies and I remove it.
- Part of the rib fat, to taste, of course, I take it to sauté the onions, chili peppers, garlic, leaving a part of them to blend when the soup is finishing, cilantro, parsley and/or celery.
- I pour this sofrito into the blender and process it into a thick paste.
- I place the pot where I will make the soup or sancocho to fire and pour the processed sofrito together with the ribs and stir, wait about 5 minutes and incorporate the 7 liters of water, let it boil.
Clean the vegetables, including the celery, remove the skin, wash and cut into small portions, the size of these is to taste.
Cut the jojotos in small portions.
I remove the skin from the green plantain and cut diagonally.
- Once the ribs are boiling in the broth that was formed, incorporate the vegetables, the beans, the green plantain and the dehydrated beef broth, continue cooking for 20 minutes more over high heat.
I add the oregano, salt and taste, let it boil for 10 more minutes.
I remove the pieces of pumpkin and celery from the soup.
The part of the garlic I left and some of the broth I pour it in the blender together with the pumpkin and celery and process, pour that mixture into the soup.
- I check the salt level and see if it is necessary to add the liter of water that is reserved. If I consider that I do not want the preparation so liquid, then, I do not add the water, because it is to taste of who is cooking. And our oriental soup or stew is ready.
I do not add the pepper to take care of the stomach of my son and his wife who are also going to eat the soup. The truth is that it is worth preparing it because it is very tasty.
If you want to prepare it with only one type of vegetable or with two, because of the carbohydrate issue, it is also valid and you can be sure that it will be very tasty.
Anyway, as it is a preparation for so many people, the amount of carbohydrates to be consumed is not exaggerated.
