We call it eggplant pickle and it is delicious with rice pola and khichdi. This recipe is very delicious on a hot day.

3.Turmeric powder, chili powder, coriander powder, salt, sugar, fried onion
Preparation method
First, cut the eggplant finely and then mix coriander, chili powder, turmeric powder, and salt into the eggplant.
Then I'll fry the eggplants a little.
Now add oil in a pan and fry onion paste, garlic paste and two dried chillies. In the meantime, the spice that I will add is the pickle masala Panchfora.
This is the real test of this masala. In the meantime, I will add the soaked tamarind. Once all the spices are well mixed, I will add the fried brinjal.
Now, when the cooking is finished, I will add water to it. Before putting it down, add a little sugar and fried onions. It is better to add a little tomato sauce.
My sweet and sour eggplant is ready.
This eggplant pulao can also be eaten with khichdi and white rice.
