Der Strudel und seine vielen Gesichter
Today, I'm going to focus on a dough that's perfect for anyone who's not only a food lover, but also someone who's always on the lookout for a bit of variety on their plate. What makes the whole thing fascinating is the fact that this dough requires only a few ingredients, is quick and easy to knead, and (with a little practice) can be used in a wide variety of ways.
Before I make this process unnecessarily complicated with long sentences, I have selected a video (from a huge selection) that is a perfect demonstration of the making of strudel dough.
Heute rücke ich einen Teig in den Fokus eines jeden, der nicht nur das Essen liebt, sondern zudem bemüht ist, stets ein wenig Abwechslung auf den Teller zu bringen. Was die ganze Angelegenheit erst so richtig interessant gestaltet, ist die Tatsache, dass dieser Teig nur wenige Zutaten benötigt, einfach und schnell geknetet und (mit etwas Übung) vielfältig verwendet werden kann.
Bevor ich nun mit langen Sätzen diesen Vorgang unnötig kompliziere, habe ich ein Video (aus einer riesigen Auswahl) herausgepickt, welches die Herstellung eines Strudelteigs vortrefflich demonstriert.
But before the strudel dough can be "stretched out" as thinly as possible, it is important to decide which filling is going to play the most important role in the flavour of this delicious dish. To put it in simple terms, is it sweet or savoury?
Although the practice of ordering a meal has been reduced to absurdity, with the sweet dish usually finishing off the menu, I decided to start the strudel project with the undisputed classic of Austrian confectionery.
Doch bevor der Strudelteig möglichst dünn „ausgezogen“ wird, sollte unbedingt die Entscheidung getroffen werden, welche Füllung überhaupt die Hauptrolle bei dem köstlichen Gericht geschmacklich übernehmen soll. Reduziert formuliert: süß oder herzhaft?
Die Praxis der Nahrungszufuhr zwar nahezu ad absurdum geführt, da das Süße meist den Abschluss in der Reihenfolge eines Menüs steht, starte ich das Projekt »Strudel« mit dem unumstrittenen Klassiker der österreichischen Patisserie.
The apple strudel
There is no doubt that there is one ingredient that takes centre stage here. The apple - ripe and juicy, with a flesh that is not too mealy. It is up to you whether you use peeled or unpeeled apples. Either way, I grate the apples into fine strips and season the whole thing with a mixture of vanilla, caster sugar and cinnamon. As you can see in the picture, this doesn't look very good on its own. So I sprinkle the apples with sultanas and coarsely chopped walnuts. Only then does the strudel have time for rolling and baking.
For me, the first piece of apple strudel ends up on a plate with raspberries and a scoop of home-made yoghurt ice cream on top.
Der Apfelstrudel
Fraglos steht hier eine Zutat uneingeschränkt im Mittelpunkt. Der reife, saftige Apfel mit möglichst nicht zu mehligem Fruchtfleisch. Ob jetzt geschält oder ungeschält, bleibt jedem selbst überlassen. Jedenfalls reibe ich die Äpfel mittels einer Küchenhobel (Reibe) in feine Streifen und würze das Ganze mit einer Mischung aus Vanille, feinem Zucker und Zimt. Da dies alleine (wie auf dem Bild deutlich erkennbar) doch äußerst ärmlich daherkommt, streue ich auf die Äpfel noch Rosinen und grob gehackte Walnusskerne. Erst dann wird der Strudel gerollt und ausgebacken.
Bei mir landet das erste Stück des Apfelstrudels auf einem Teller mit Himbeeren und einem Bällchen selbst gemachtem Joghurt-Eis.
The vegetable-potato strudel
Your own preferences and the availability of the vegetables you want to use are essential for this type of strudel. In contrast to the sweet version, in which the fruit is rolled up 'raw', the first step is to put a large frying pan on the stove.
The potatoes and the onion are peeled and then cut into small cubes. Add a little ghee (clarified butter) or coconut oil to the hot pan, fry until lightly browned and season to taste with salt and pepper. Cut the leek, the carrots, and the kohlrabi into small cubes as well, but do not fry them; instead, poach them in the steam for a maximum of 3 to 4 minutes. Season to taste with thyme, parsley, herb salt and (if you like it hot) a little bit of chilli. Mix it all together with the potatoes and then place it on top of the pastry as a filling.
I have chosen to use chard as the 'base'. But a salad would go very well with this as well.
Der Gemüse-Kartoffel Strudel
Bei dieser Variante des Strudels stehen eigene Vorlieben und Verfügbarkeit des jeweiligen Gemüses klar im Vordergrund. Im Unterschied zur süßen Auslegung, bei der das Obst „roh“ eingerollt wird, landet hier zuerst einmal eine große Pfanne auf den Herd.
Kartoffeln und die Zwiebel werden geschält und anschließend in kleine Würfel geschnitten. Etwas Ghee (Butterschmalz) oder Kokosfett in die heiße Pfanne geben und das Ganze leicht anbraten und mit Salz und Pfeffer würzen. Lauch, Karotten und Kohlrabi werden ebenfalls in kleine Würfel geschnitten, jedoch nicht gebraten, sondern im Wasserdampf maximal 3 bis 4 Minuten pochiert. Gewürzt wird mit Thymian, Petersilie, Kräutersalz und (wer es scharf mag) etwas Chili. Nun mit den Kartoffeln vermischen und dann als Füllung auf den Teig geben.
Ich habe als „Unterlage“ Mangold gewählt. Ein Salat dazu passt allerdings auch.
Pumpkin strudel with a sweet and sour chilli sauce
I cut a pumpkin, a couple of potatoes and some onions into thin strips and then fried them in a large frying pan for about 10 minutes. I seasoned them with salt, pepper, garlic, and a pinch of nutmeg. Leave the pumpkin mixture to cool and then use it as a filling for the pastry.
As pumpkin is not particularly well known for having a dominant flavour of its own, I prefer to add various chutneys or dips to it. In this case, it is a sweet and sour chilli sauce that I make myself. (Like almost everything else that ends up touching my palate).
Kürbis-Strudel mit einer süß-sauren Chili Soße
Hierzu habe ich einen Kürbis, ein paar Kartoffeln und Zwiebeln in dünne Streifen geschnitten und anschließend etwa 10 Minuten in einer großen Pfanne angeschwitzt und mit Salz, Pfeffer, Knoblauch und ein wenig Muskat gewürzt. Die Kürbismischung abkühlen lassen und anschließend als Füllung nutzen.
Da der Kürbis jetzt nicht sonderlich berühmt ist für einen dominanten Eigengeschmack, bevorzuge ich verschiedene Chutneys oder Dips beizugeben. In diesem Fall ist es eine süß-saure Chilisoße aus eigener Produktion. (Wie nahezu alles, was letztlich mit meinem Gaumen in Berührung kommt.)
Nutrition without variety is boredom at its best
To round off my little excursion into the inner workings of the strudel, I'd like to mention a couple of other ways in which you can conjure up a taste experience on your plate.
As you can see in the first picture, the filling can also be made from beans (with lots of marjoram, onions and smoked bacon), fresh asparagus (always roll up the green asparagus raw, as it will go soggy if you pre-cook it), sauerkraut or white cabbage.

Zum Abschluss meiner Exkursion durch das Innenleben eines Strudels, erwähne ich noch ein paar weitere Möglichkeiten, ein Geschmackserlebnis auf den Teller zu zaubern.
Wie am Beispiel des Eröffnungsbildes zu sehen ist, kann die Füllung auch aus Bohnen (mit viel Majoran, Zwiebeln und geräuchertem Speck), frischem Spargel (den grünen Spargel immer roh einrollen, da er vorgegart sofort matschig wird), Sauerkraut oder Weißkraut gefüllt werden.
Sometimes it has to be savoury
My meat consumption is usually close to zero. However, there are times when I make an exception. This is especially true when it comes to the white cabbage stuffing. Here, the strongly spiced cabbage (with a lot of caraway and parsley) is topped with a lot of sliced bacon. Of course, it can also be made without… But occasionally, it just needs to be savoury.
Manchmal muss es deftig sein
Obwohl normalerweise mein Konsum an Fleisch in Richtung »Null« tendiert, gibt es Momente, in denen die Ausnahmeregel greift. Dies gilt insbesondere für die Weißkohlfüllung. Hier wird das kräftig gewürzte (viel Kümmel und Petersilie) Kraut kräftig mit Speckscheiben belegt. Selbstverständlich geht es auch ohne … Aber manchmal muss es eben deftig sein.
With a touch of the Far East
It doesn't always have to be the oven, where strudel likes to be baked. Following the example of the Asian spring roll, it is also possible to form small packages with the dough and filling and then fry them in hot fat. It is important, however, to make sure that there are no holes in the wrapper. The fat from the deep fryer in between the fresh vegetables just does not taste good.
Mit einem Hauch aus Fernost
Es muss nicht immer der Backofen sein, wohin sich der Strudel zum Garen liebend gerne zurückzieht. Ganz nach dem asiatischen Vorbild, in Form einer Frühlingsrolle, können mit dem Teig und der Füllung auch kleine Päckchen geformt und anschließend im heißen Fett ausgebacken werden. Dabei sollte allerdings peinlichst genau darauf geachtet werden, dass die Hülle keine Löcher aufweist. Eingedrungenes Fett aus der Fritteuse zwischen dem frischen Gemüse ist einfach nicht lecker.
