We love one-pot pasta recipes, Sweet potato makes this pasta creamy and delicious. You can use chickpeas instead of lentils or curry powder instead of curry paste (try 1.5 T powder instead of 3 T paste).
I prefer tamari instead of salt because it adds more flavour but you can simply salt the veggies and pasta as they cook if you don't have tamari or soy sauce. This recipe gives us dinner for two nights (four big portions).
Try it with whole wheat chapati.
