Llevo demasiados días fuera de Hive y voy a contarles por qué. En septiembre me tocaba ir a Los Tuxtlas a implementar la primera etapa de mi experimento de doctorado. Era un trabajo arduo pero había planificado que en 10 días estaría hecho. Como todos los inconvenientes de la vida estarán siempre garantizados, terminé pasando 23 días en esta bella y calurosa tierra. Pero fue espectacular….
Antes de comenzar les explico brevemente dónde están Los Tuxtlas. Esta región comprende los municipios de Catemaco, Santiago Tuxtla, San Andrés Tuxtla y Hueyapan, en el estado de Veracruz. Está localizada en el Golfo de México y alberga el bosque tropical más al norte del continente americano. Es una región muy parecida a Cuba en el paisaje, el clima y la forma de ser de las personas, así que en parte es como estar en casa.
Septiembre es el mes en que comienza la temporada festiva en México, pues el 15 se conmemora el grito de independencia. Para esta festividad se adornan las calles, las personas colocan banderas en balcones y puertas, todo se llena de colores.
Hay comidas que son clásicas en estas fechas, el pozole y el mole entre ellas. Quisiera poder transmitirles el sabor de esos platos a través de estas palabras, si no lo han probado tienen que hacerlo en su visita a México. El mole que les muestro debajo era dulce y picante a la vez, es una salsa que se hace con muuuuchos ingredientes, incluyendo semillas, chile y chocolate. En este caso tenía pollo e iba acompañado de un arroz blanco con guisantes vedes, una delicia.
Además de los clásicos del mes de septiembre, he de decir que toda la comida de Los Tuxtlas es muy rica, mi favorita es la Tampiqueña, que no he podido comer completa nunca y les mostraré en otra publicación.
Un evento desconocido para mí y que resultó ser espectacular fue el Festival Internacional de Globos de Papel en San Andrés Tuxtla. Este evento consiste en la liberación de hermosísimos globos de papel de China, que desafían la imaginación, con sus diseños coloridos y la física, con su tamaño y accesorios. Es indescriptible la energía que se desata alrededor de la liberación de uno de estos globos. Además de los grandes globos nocturnos que son un bello espectáculo, las familias liberan globos hechos en casa durante los días del festival.
La celebración del grito de Independencia es un evento familiar y social, las personas suelen reunirse a comer juntos y bailar. Luego a las 11 de la noche se reúnen en la plaza o parque local, donde se el representante de gobierno habla al pueblo brevemente y se presenta un evento pirotécnico. Después de esto, en San Andrés al menos, hubo fiesta toda la noche con un grupo de música regional. Lamentablemente yo debía trabajar al día siguiente así que después de los fuegos tuve que ir a dormir.
Lo que más disfruté en este mes casi completo que pasé en Los Tuxtlas fue la oportunidad de conocer a las personas más maravillosas que se puedan imaginar. Dos familias me acogieron por turnos y me incluyeron en su vida familiar. Esta experiencia me dio la oportunidad de entender cómo viven en realidad las personas y experimenté la hospitalidad de los jarochos, tan parecidos a los cubanos. Fue como estar en casa en muchos aspectos. Algunas de estas personas me acompañaron todos los días a trabajar, bajo lluvia o sol, y sin ellos hubiera sido imposible hacer todo.

There are foods that are classics at this time of the year, pozole and mole among them. I would like to transmit you the taste of these dishes through these words, if you haven't tried them you have to do it on your visit to Mexico. The mole I show you below was sweet and spicy at the same time, it is a sauce that is made with lots and lots of ingredients, including seeds, chili and chocolate. In this case it had chicken and was accompanied by white rice with green peas, a delight.
Besides the classics of the month of September, I have to say that all the food in Los Tuxtlas is very tasty, my favorite is the Tampiqueña, which I have never been able to eat whole and I will show you in another publication.
An event unknown to me that turned out to be spectacular was the International Paper Balloon Festival in San Andres Tuxtla. This event consists of the release of beautiful paper balloons from China, which defy the imagination, with their colorful designs and physics, with their size and accessories. It is indescribable the energy that is unleashed around the release of one of these balloons. In addition to the large night balloons that are a beautiful spectacle, families release homemade balloons during the days of the festival.
The celebration of the cry of Independence is a family and social event, people usually gather to eat together and dance. Then at 11 p.m. they gather in the local plaza or park, where the government representative speaks to the people briefly and a pyrotechnic event is presented. After this, in San Andres at least, there was an all night party with a regional music group. Unfortunately I had to work the next day so after the fireworks I had to go to sleep.
What I enjoyed most in this almost full month I spent in Los Tuxtlas was the opportunity to meet the most wonderful people imaginable. Two families took me in turns hosting me and included me in their family life. This experience gave me the opportunity to understand how people really live and I experienced the hospitality of the Jarochos, so similar to Cubans. It was like being at home in many ways. Some of these people accompanied me every day to work, rain or shine, and without them it would have been impossible to do everything.
