Me siento feliz de participar nuevamente en el Concurso que cada semana ofrece @Qurator, en esta ocasión corresponde Berenjenas, para mi entrada preparé unas Berenjenas a la vinagreta, les invito a acompañarme en el proceso de elaboración.
INGREDIENTS
2 Eggplants.
1 carrot.
1 Paprika.
1 Onion.
1 lemon.
Olive oil.
Vinegar.
INGREDIENTES
2 Berenjenas.
1 Zanahoria.
1 Pimentón.
1 Cebolla.
1 Limón.
Aceite de Olivo.
Vinagre.
PREPARATION
Preparing the eggplant.
To start I washed and peeled the vegetables, then cut them into julienne strips.
PREPARACIÓN
Preparando las Berenjenas.
Para iniciar lavé y pelé los vegetales, luego los corté en julianas.
Agregué aceite en la olla, seguidamente el pimentón, cebolla y zanahoria, dejé sofreír por 7 minutos y agregué un poco de orégano.
Once sautéed I added the eggplant, salt and let it cook for 12 minutes over low heat.
Ya sofritos agregué la berenjena, la sal y dejé cocinar por 12 minutos a fuego bajo.
Making the Vinaigrette

Finally I added the vinaigrette to the vegetables and took it to the refrigerator for 4 hours and finished some delicious Eggplants with Vinaigrette ready to accompany our meals.
