A couple of our pizzas were in the shape of a star. We had a big star cutter that we cut out the dough with.
One of the pizzas was a barbecue chicken pizza. It was the last year I ate meat. I used to bring home the mistakes and this was the pizza that I liked the most.
Today I made a plant based version of the barbecue pizza. Instead of a star I made a sun. I really miss the sun.
Dough recipe
4 cups flour
2 cups warm water
1 teaspoon sugar
2 1/4 teaspoons yeast
1 teaspoon salt
1/4 cup olive oil
Mix the water with the yeast and sugar. Place in a warm place covered for 10 or 15 minutes. When it bubbles, add flour and oil.
Mix and knead. If you have a stand mixer...good for you. Put it in there and mix for a while until it comes apart from the side of the bowl. If you don't have one than knead it by hand for 10 or fifteen or more minutes.
There is no shame in buying store bought pizza dough if you don't have time for this.
I am fortunate to have an oven so this is my proofer where I set the dough to rise. I just cover and place it in the oven with a pan of hot water.
I punch it down then place it back while I prepare the topping for the pizza.
The replacement for the chicken was tempeh. I first sliced it thinly than boiled it in vegetable broth. cover completely, boil then simmer until all the broth has evaporated.
Roll out the dough than cut out the edges to make a sun shape.
Instead of pizza sauce I used barbecue sauce which I made. There are many ways to make this. Many use bourbon but I was not going to buy bourbon just for this so I left it out.
Barbecue sauce
1 cup tomato paste
1 cup soaked sundried tomatoes
1/2 maple syrup
1/2 cup molasses
1/4 cup apple cider vinegar
1 tablespoon miso paste
1 cup lemon juice
3 cloves minced garlic
1 diced onion
1/4 cup braggs liquid amino or soy sauce
1 teaspoon liquid smoke
1 tablespoon onion powder
1/2 teaspoon ground cloves
2 tablespoons chili powder
1 teaspoon smoked paprika
Saute the onion and garlic. Add them to the rest of the ingredients blend and boil. Simmer for twenty minutes or so. Cool then put in a jar.
Spread the sauce on the dough.
These are the ingredients I chose.
Red onion
Mushrooms and yellow peppers
Sundried tomatoes, marinated artichoke hearts, cherry tomatoes and tempeh
I put it in a 400F degree oven on the top rack then turned it down to 350 after ten minutes changing it to the bottom rack. I didn't time it but checked it after a while and took it out when it was done. The edges are golden.
I garnished it with fresh basil and oregano.
It was a little sad to have to cut the sun into pieces but we just had to eat it.
It was worth destroying. What is it about pizza?
