This is my contribution to hive top chef where this week's topic is Flatbread.
Paratha is an Indian flatbread that usually starts with whole wheat flour. There are many varieties other than plain. I chose to make some curried onions to fold into the flatbread.
Before doing that I got the dough ready.
Dough
2 cups whole wheat flour plus more for rolling
2 tablespoons olive oil
1 teaspoon salt
1 cup warm water or more
I added the water to the flour oil and salt and mixed adding more until I could form a dough. I kept it as soft as possible knowing that I would be adding more flour later to roll.
After mixing the dough and kneading well, it was covered and set aside while I prepared the onions.
Onion mixture
1 large red onion sliced
4 cloves minced garlic
1 teaspoon minced ginger
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon mustard seeds
1 teaspoon carom seeds
1/2 teaspoon nigella seeds
1 teaspoon garam masala
1/2 teaspoon asafoetida
1/2 teaspoon turmeric
1/2 teaspoon amchur (mango powder)
3 small dry chilies
1 teaspoon salt
I toasted the whole spices until they started popping. After they were pounded in a mortar and pestle. I don't have a spice grinder or a good blender. A mortar and pestle really brings out the aromatics of the spices.
For the powdered spices I fried them in oil, then put the pounded seeds into the fry pan with the fried spices. Then I added the spices from the pan to the onions, garlic and ginger which had been frying in a larger pan already.
After the onions had cooked with the spices I cooled them off a bit. I then rolled out the dough and divided it into balls around golf ball sizes, to roll out as thin as I could. There was flour sprinkled on the balls to help the rolling.
I added some of the onion mixture on top.
I folded the sides together.
After flipping it over I gently flattened it out again. In a hot pan on medium high heat I added the parathas that were oiled on one side and when it was golden I flipped it oiling the other side.
These were great with a lentil soup and some mango chutney that I had from another day.
