CREAM CHEESE AND STRAWBERRY ICE CREAM

recently we had a challenge with the theme ice cream. i made some butter pecan ice cream which was so delicious that i am making more but this time the flavor is: cream cheese and strawberries
now this recipe is simple and quick to make but you do need an ice cream machine. there are no eggs so it is not like a custard and there is no cooking involved. the cream cheese flavor shines through giving it an extra rich yet refined and somewhat tart taste. it is very creamy but less sweet so it may not be your children's first choice but if you love cream cheese this one is for you.
THE INGREDIENTS
125 g cream cheese
3 dl heavy (whipping) cream
2 dl milk
1,5 dl sugar
12 or more whole strawberries
1,5 ts vanilla extract
0,25 ts salt
i am using only 12 strawberries here as i want them to be secondary to the cream cheese. you may prefer to use more but if you do, you will likely also want to increase the sugar as well. it is too early for good strawberries here so i am using frozen ones which i froze last summer with a little sugar. they were partially thawed before i started.
put everything in a blender and mix until smooth
pour the blend into the ice cream machine and start it up. the outermost liquid freezes very quickly and since i was a little slow taking pictures and all i had to scrape the sides of the freezing bowl with the paddle before i could start the machine.
after freezing remove the paddle and lick it clean. this is the chef's honor and privilege. your patience will be rewarded with a nice firm ice cream if you keep it covered in the freezing bowl for half an hour before eating. even still this ice cream melts quickly so i put the bowls in the freezer which helps a lot.

here i have used some homemade strawberry rhubarb sauce and a few strawberries. the fresh mint leaves from the garden are mostly for decoration
