simple breakfast rolled omelette
here is how to do it:
ingredients:
3 eggs, separated
1/4 red bell pepper/paprika/capsicum, chopped
1 Tbsp fresh coriander/cilantro, finely chopped
1 spring onion, finely chopped
salt and pepper to taste
2 tsp butter for frying
separate the eggs
lightly beat the yolks with a little salt and pepper
lightly beat the whites
mix the chopped veggies in the egg whites,
add salt and pepper
melt the butter in a frying pan. add the egg white mixture and spread to an evenly thin layer. fry over medium heat until solid.
roll the cooked egg into a roll.
place the roll in the middle of the pan.
pour the beaten egg yolks on one side of the egg white roll.
spread the yolks to an even thin layer making sure there is contact with the roll.
when cooked resume rolling the egg white roll over the yolks
the entire outer layer will be the yolks and the inner part the whites with the veggies.
remove the roll carefully onto a cutting board and cut into sections
arrange the sections and garnish with a little red pepper and fresh coriander
