Hello and greetings🙏here is my yogurt recipe for the top-chef contest.
with main ingredient yogurt, Indian traditional Lassi in three varieties.
If you are familiar with Indian restaurants you may know the taste of it. I make it three different ways. It is good to have some drink after food which helps digestion and the yogurt has lactobacilli, which helps absorption.
The regular salted lassi the royal mango lassi and the plain lassi all with the main ingredient- homemade yogurt
This yogurt I used in my recipe is made from organic milk I tried other ways using coconut or almond yogurt but the taste is just not the same. Lactobacillus from yogurt produces vitamin K, which is important for bone strength and blood clotting.
It produces lactase, which breaks down the sugars in dairy.
It functions as a probiotic, balancing your internal bacterial population. and nourishes the intestine helping the absorption of nutrients.
salt lassi
This salted lassi is most often enjoyed in hot weather.
The ingredients are
1/2 cup yogurt
1/2 cup water
1/4 tsp salt
pinch of asafoetida (hing)
1/4 tsp roasted cumin powder
a few mint leaves for garnish
Here I mix all ingredients except the mint leaves and a pinch of cumin powder. blend for 1 minute. garnish with mint leaves and a pinch of cumin powder.
and here is our digestive salt lassi.
mango lassi
The ingredients for mango lassi 2 servings
1 cup yogurt
100 g mango pulp
1 cup water
1 Tbsp or less sugar
4 cashews, 5-6 pistachios, 4-5 raisins all chopped
2 cardamom pods powdered, a few saffron threads.
2 tsp lemon juice,
Mix all ingredients in the mixer or blender except saffron and raisins and nuts. blend it for 1 minute and our lassi is ready. garnish with raisins, nuts and saffron.
mango lassi is mostly served for special occasions.
plain lassi
Plain lassi Ingredients 2 servings
1 cup yogurt
3/4 cup water
11/2 Tbsp sugar
pinch of salt
2 cardamom pods, powdered
4-5 cashew, 4-5 pishtachios, 4-5 raisins chopped for garnish
few threads of saffron
Mix all ingredients except saffron and raisins and nuts and blend it for 1 minute. our lassi is ready. Serve garnished with raisins, nuts and saffron.
Plain lassi is the most common variety
