This week's Hive Top Chef Theme is SALAD.
And I have the perfect dish for it!

In case you're unaware, I'm still stranded in Vietnam while my family is in Malaysia and this has been the case since March 17 when both countries lock down entry and exit. Even now, it's not so easy to return home though there are repatriation flights but coming back to Vietnam would be difficult. I wouldn't say that I'm stranded here since I chose to stay on for the purpose of keeping my job. Many whom I know are either jobless or having a tremendous pay cut; either way is tough because survival is important now.
Since staying in Vietnam for almost 18 months, I've gotten quite accustomed to the lifestyle and food here. One thing that I enjoy the most is the freshness and unlimited supply of vegetables & fruits. Vietnam is still very much an agriculture country and since they grow most of their vegetables and fruits, you can be sure that it's always fresh. I've never eaten so much herb plants such as basil, mint and other local herb plants. Even my facial complexion is much better now.
Having the theme this week focusing on salad, it seems to be easy peasy for me. While I know many would share some sophisticated salad of theirs, I realised the best salad is the 100% vegan salad. These are the ones that is most healthy and good for our body. It's when we add so many ingredients into the salad - making it so complicated. For me, if I'm thinking of having a salad dish, I would just head to the local market and look out for whatever vegetables that interest me and that would be the ingredient for my salad.
There's no hard fast rule what should be in your salad but I would always stick to my favourites such as carrots, cucumbers, lettuce and tomatoes. Sometimes I would add in capsicums, avocados or beetroot if I could find. Another ingredient is Chinese turnip which is very commonly found in Vietnam too though it is usually eaten fresh on its own. I do occasionally add it onto my salad dish.

For the dressing, since I chose to keep this a full 100% vegan dish, I tend to opt for a more vegan dressing. One thing good about this country, there's plenty of options when it comes to salad dressing - thanks to the Koreans & Japanese who has spread their wings and planted their roots in this country. 😆
