Flipping pancakes at fetes and fundraisers was my job for many many moons; hard work for sure as 15kg flour had to be mixed into a thin pancake batter the night before, ready for action the following day. I used my son's empty whey protein powder containers to store the batter in.
The pancake stall was one of the busiest with people queueing up from the time we opened till everything was sold out.
No standing around trying to lure customers; the smell of pancakes and seeing them being flipped was enough to draw people in. That is why I'm convinced that the phrase Selling like hotcakes refers to pancakes!
Anyone considering starting a little business should read on as pancake ingredients cost very little and would make a very successful pop-up eatery as one can use any filling your heart desires.
Let's get straight to the Recipe and start cooking
Basic Pancake Batter
- 600ml Water - yep you saw right, no milk in my batter as that makes the pancake rubbery!
- 2 Eggs
- 2ml Vanilla Extract
- 500ml Self-Raising Flour
- 2ml Salt
Beat liquids together till frothy, slowly add dry ingredients and beat till a smooth batter is obtained.
Using a soup ladle, spoon into a hot oiled crepe pan, rocking pan from side to side till batter has spread all over.
Cook till both sides are light golden brown; don't forget to try flipping a pancake;)
Stack on a plate and keep warm in a hebcooler/ polystyrene cooler box till all pancake batter is cooked; that is if the family don't start demanding a taste tester:)
The large pancakes were simply sprinkled with sugar & cinnamon and rolled up.
I made smaller pancakes for my stack.
Filling
- 3 Bananas, sliced
- Sugar & Cinnamon mix
- Golden Syrup or Maple Syrup
