Comfort food to warm one's belly was for dinner. I cut a loaf of bread into cubes and let it dry for two days before making the stuffing. My husband brought home a package of extra-thick Pork Chops and I knew what I wanted to do with them. That's right, stuff and bake them.
After slicing a pocket into each one, I seasoned them well and then packed a large amount of herb stuffing into each.
The two of them just fit into the 9x9 pan. I like to bake them slowly to retain a moist chop between 325° and 350°F. works the best. It can take up to an hour to cook them through depending on how thick the chops were.
Sweet Potatoes are one of my favorite things to have with pork and these were the last ones from this past fall harvest. I don't know why, but homegrown tastes much sweeter than the ones from the grocery store. It is probably the soil or the fact that I grew them, lol.
After boiling them until tender and adding salt, pepper, and sour cream they were ready.
I got distracted and overcooked the peas but they were still tasty. I had not thought of the applesauce, but hubby snuck a jar in the fridge knowing I was making the pork chops. He just can't help that sweet tooth of his.
Now, that I made this post, my mouth is watering just thinking about how good they were. I can see them being back on the dinner plate in the near future. I mean, comfort food is perfect on a cold winter's day, right?
