A Necessary Introduction
In these chronicles, I'll try to share my opinions because I think it's wonderful to leave memories so that future generations can look back on what we were like in these times.
Without further ado, here's my first chronicle.
Grandma's Recipes
I have a lot to thank my maternal grandmother for, and it's great that I remember the positive beyond the things I didn't like as a child. Now that I'm older, I can understand that she was preparing me for life.
I've always said that I love cooking and that I acquired that passion from my mother. However, my maternal grandmother was an excellent cook, and perhaps that culinary heritage comes from her.
My grandmother had very special dishes. Her rice dishes were delicious, her roasts, and the way she cooked meats. She was also known for making excellent desserts and preparing fruit juices that you had to ask to try again because the flavor was unmatched.
However, there was one recipe that, due to its simplicity, the difficulty it took me to try, and how much I liked it when I did, is the one I want to bring to your attention.
My Favorite Recipe
Of all Grandma's recipes, my favorite is her Mixed Vegetable Salad.
I don't know why it took me so long to try that recipe. I must say I received many punishments and a few beatings for refusing to try it.
One day, when no one was looking, I tried a little bit of the leftover salad and fell in love with the flavor.
The Recipe Inside
My grandmother made it with tomato, watercress, lettuce, and roasted pepper. In my case, I've added other vegetables or made it with whatever I have on hand.
Preparation Instructions
Grandma said that every vegetable should be washed well, especially the watercress, and that the pepper should be roasted.
Once the vegetables are thoroughly washed, chop them.
After the peppers are roasted, remove the burnt parts and wash them.
Next, place the vegetables on a plate or platter.
Prepare a dressing based on oil, vinegar or lemon, garlic, and salt to taste.
When you're ready to eat, add this dressing to the salad, and it's extremely flavorful.
It's a perfect accompaniment to meals, and when you invite someone over, this dish is a must.
At home, my wife and I have vegetable salad with protein for dinner in the evenings.
This is a way to eat healthy and always remember one of the most important people in my life.
