For the last couple of weeks my days have been as follows: Bake a couple of days, harvest a couple of days, wash, rinse, and repeat.
It has been more than a bit busy.
But I don't mind. Starting about this time of year I get seized with The Little Red Hen mindset and every time I place something into the freezer or put a freshly canned jar on the pantry shelf, I get a warm cozy feeling.
You know, I will be warm and cozy this winter because I prepared for it.
So this morning, since I wasn't at the theme park baking, I found myself doing fall harvest chores. First I blanched, cut kernels, bagged and froze some more corn.
My six hens are always so pleased when I have a work day too, as they reap the rewards in the form of plant guts and such. Even though it was fairly early when I took over the husks and cobs for the girls to peck at, there was still an egg waiting for me.
My trusty companion, Crazy Cora is always with me when I go about the farm doing things. My phone rang when I was walking back from the barn and I had to chuckle as I sat down on the carport ledge to chat a bit, for Cora thought if she gave me the cute face show that I might bless her with the egg.
Silly girl. (She did get her dental treat though).
After corn chores, I moved on to blanching and freezing the bit of beans that I picked when I picked the corn. I never get tired of green beans. Green beans, bacon, and onion is one of my all time favorite dishes!
After the beans were all done, I moved on to bagging the basil I picked too. A couple weeks ago, I read a blog post where a lady tried all the main methods of preserving fresh basil and she said her favorite was just washing, drying, and putting whole leaves of basil into a bag and freezing it.
So, in the name of science I am trying that out this year. I have a TON of basil to experiment with and I am super curious to see if freezing the basil whole in the bag works out well. I'll report back on that later!
Another thing that was ripe this morning were quite a few tomatoes, and since it is game night tonight, I am going to turn said tomatoes into some fresh pico de gallo. I adore that stuff, and as I have a fresh bag of tortilla chips lurking on my counter, I feel like making the pico is a sound culinary decision.
But for now I must bolt, some boys just showed up with my truck and flatbed trailer. What's cool about that is some friends of ours are letting us borrow their disc and seed roller, there's pumpkin patch plans afoot!!
Happy homesteading ya'll!!
