Can you really call this Pesto?
i began with Dandelion flowers & Melissa leaves, both growing wild in my #garden.
They had been drying out a little for about 24 hours, but when i put in the food processor they were way to "stringy", even after processing with olive oil & (homemade) apple cider vinegar. i added some wild mint, ground flax seed (i didn't have any pine nuts), then added some tahini & peanut butter to give a better consistency, along with himalayan salt, freshly ground black pepper & some ginger powder.
Tasting as i proceeded, i added a little Dijon mustard, a bit more #ACV and finally some #vegan cheese.
i skipped the garlic as i prefer a Sattvic diet (https://halepule.com/pages/a-guide-to-sattvic-foods) so as not to feed the movement of the "monkey mind".
i spread on a rice cracker and it tasted quite good. The rest goes in a jar in the fridge.
My understanding is that it's pretty good #naturalmedicine for #holistichealth.
