“Let food be they medicine and medicine be they food” the Greek physician Hippocrates said. And what he is saying Is that the food we eat can play a big role in our health and how we feel.
Mushroom soup can be soothing to your tummy and your heart. Mushrooms have been known to have medicinal properties for hundreds of years. Maybe you have your own preference of mushrooms you enjoy. That is the beauty about sharing ideas of recipes. It’s not the exact number of ounces of liquid or butter, it’s your tastes and likes. We can help with the idea :-)
Today’s idea is Mushroom Soup, Thai Way. We start by gathering our ingredients of: brown and white mushrooms, cilantro, corriander, red onion, lime , sea salt and and of course thai chili for a little spice.
You can use your favorite mushrooms. For this soup we used the White Seafood and Brown Beech mushrooms.
Let me explain this recipe in such a way you can cook with whatever ingredients you will be using. You want to have your soup pan with about 2 cups of water that you will bring to boil with whatever your spices might be. Spices like onion and whatever veggies you may be adding. All all your spices. In our case this is: red onion and lemongrass. Bring this to boil and then add your mushrooms and they cook all for 5-10 minutes.
At the end of the boil of mushrooms and some vegetables, this is when you want to turn off your burner add your greens like cilantro, corriander and lime juice (taste as you add). Last nut not least, you bump up the soup with a few chili flakes.
I know some people may want to add palm sugar for a little sweetness, that is your call.
That is all. With the burner off, just let the ingredients marinade a bit. Taste for salt and pepper. This is where you can also taste for more lime to get the sour taste you like.
This soup is super easy to make. Maybe the ingredients list is a little long, but it’s not that expensive and you can certainly experiment with a larger size of soup so that you have plenty of leftovers. A nutritious and easy way to feed yourself and we remain indoors and trying to stay healthy.
