
Veggie Cornucopia Vendor?
My favorite vendor passed by a little later than we were used to. I guess she had many customers who ordered vegetables from her. I bought a few veggies and thought about the price; is it cheaper here than in other places? For those of you interested to know and for comparison, the veggies I bought (in the image above) cost around US$1.00. Come to think of it, I could have gotten a little more with that amount if I had walked 500 meters to the vegetable store in the "talipapa" (a small wet market in the community) but it is really convenient that she brings the veggies directly to my house. She is an angel.
Ampalaya
It's already lunchtime and we haven't prepared anything yet. We will have to eat lunch a little later than what we're used to but at least the veggies will be super fresh.
I thought about something simple and easy to prepare so I cooked up an old-time favorite of mine: Bitter Gourd with Eggs!
Pressed for time, my stomach is pushing me to cook a little faster than my usual pace. The prep time for this dish is less than 5 minutes and the cooking time is around 5 minutes also. Eating time is, wow, so quick I was not able to time it. lol

The procedure I used in creating this dish is fairly simple and easy: just sautee the Bitter Gourd in 1 tablespoon of coconut oil for 1 minute. Add in salt and pepper, bay leaf, and turmeric powder. Cook a little more and then add 1 cup of water. Let it boil and add some more salt and pepper, if necessary. Add in some mushroom powder seasoning and cook some more. Stir gently and cover. After a minute, check if the vegetable is cooked. Whisk 2 pieces of eggs and put them in. Stir gently and let cook for 30 seconds or so.
Serve hot and enjoy.
