This week I baked this two times. In the morning I mix the ingredients roughly with hand, I fold the dough few times every 30 min to one hour for 3 to 4 hours (the dough takes time to rise but I don't have to be super punctual as it contains little amount of yeast), I stretch the dough gently to the oven tin size, then I bake it with thinly sliced vegetables on top before lunch.
The slow baking method is based on a book titled "How to Make Bread: Step-by-step recipes for yeasted breads, sourdoughs, soda breads and pastries" written by Emmanuel Hadjiandreou. With this book I started baking 6 years ago. It was my first year in Germany :)
This focaccia is a kind of easy going pizza. Actually my former colleague who is a professional cook from Italy told me they use the same dough for pizza, focaccia and ciabatta.
Tomato sauce is not necessary. Just I put what I have in kitchen. As Pizza started as a street food so why not making it casually with what we have!
It may be fun for kids to help topping vegetable, which is like drawing on a canvas. My daughter likes it a lot.
Not only it's easy to make, tasty and fun for kids but also I like it as it's easy to bring to backyard to have lunch outdoor. It can be a good handy accompany for movie night at home too.
Last but not least, it only needs few grams of fresh yeast! Friendly for us to save yeast during current yeast shortage ...
Happy Easter & happy baking!
