Today, I am going to introduce to you Pork Sinigang, it is one of the most popular and all-time favorite comfort food in my country. Sinigang is famously characterized by its sour taste and commonly considered as a comfort food specifically during the rainy season.
Sinigang has many variants. In the absence of Pork, you can use fish or prawns as a substitute and cooked exactly the same.
Sinigang has also many vegetable combinations, it can be combined with Mustard and Taro (root), or it can be combined with Water Spinach and Radish, or it can be combined with Mustard and Radish, or it can be combined with Mustard and String Beans. If you ask me I prefer pork sinigang combined with Mustard and Taro and the variant that I am going to cook for today is the one with Mustard, Radish, String Beans, and taro.
Ingredients:
- Pork
- Mustard
- Radish
- Taro
- Finger Pepper
- String Beans
- Tomato
- Onion
- Powdered tamarind (in absence of real Tamarind)
- Salt (to taste)
Preparation
1. Was the pork and put it on a cooking pot then add some water
2. Wash the mustard then cut the stem
3. Wash the radish, peel it, and slice it into chips
4. Wash the string beans and cut them into short sticks
5. Peel, slice, and wash the Taro
6. Wash and slice the tomatoes
7. Peel and slice the onion
8. Wash the finger pepper
9. Ready the powdered Tamarind
Cooking
1. Add all the ingredients in the pot except for Strings Beans and Mustard, add salt to taste then let it boil
2. Remove the suds and bubbles at first boil
3. Let it boil again until the pork is tender, adjust the taste according to your preference by adding more salt.
4. If the taste is now okay and the pork is already tender add the powdered Tamarind (about three tablespoons), add also the Strings Beans then let it boil, you can adjust the sourness of the soup according to your preference by adding more powdered Tamarind.
5. If the Strings Beans is about to be cooked add the Mustard then let it boil
6. If the Mustard is cooked, it is done.
