No electricity nor water? No problem. You can still enjoy a healthy snack with this simple recipe. You can substitute the crab meat with salted egg, which is more affordable and has a longer shelf life.
By the way, I made the salad in the photos here before the blackout. I prepared the salted egg version yesterday, but I didn't have time to take photos because we were famished.
This is my version of the Japanese kani salad. So my apologies to the Japanese if this is not authentic. I'm just trying to make do with what's available.
Ingredients (rough estimates)
- 1-2 cucumbers
- 1-2 carrots
- 10 cherry tomatoes or 2 salad tomatoes
- 2-3 crabmeat sticks
- 1 lettuce head
- salt and pepper
- 2-3 tbsp Kewpie mayonnaise
- 1 tsp sesame oil
Slice the cucumbers thinly. This European cucumber is greener and juicier than the local variety. If you're using cherry tomatoes, no need to slice.
Shred the crabmeat sticks. You can just do it by hand.
Chop the carrots thinly as well. The white cucumbers here are the local variety.
Roughly chop the lettuce to your desired size.
Put all the ingredients in a bowl, then add the Kewpie mayonnaise and drizzle with a bit of sesame oil. Add a pinch of salt and black pepper powder.
Then mix everything, making sure the dressing is coating the ingredients evenly. And that's it! It's ready to be eaten and enjoyed!

Note: Our city is still experiencing the devastating aftermath of Typhoon Odette (Rai). No water and electricity supplies in most areas although, as of this writing, the authorities are doing their best to restore them little by little. So I thought of sharing this recipe, especially the salted egg version, because it can be done simply with no electricity and just little water.
