Hello everyooone!!!

I hope you're doing well or are trying to be well. I’m feeling a bit better. Even though I keep experiencing things that wear me down day by day, I try to keep going… But this sense of purposelessness is truly exhausting. I feel incredibly unsettled, as if something awful could happen at any moment.

But I need to set my own mood aside for now, because there are three mouths to feed at home. That’s why I try to make the most of what I already have in the house and save money where I can. So I took a look around and decided to make stuffed peppers (dolma) with just a few extras from the shop (I only needed to buy some tomatoes). I had actually bought these peppers about two weeks ago from the bazaar, and they were still in perfect condition! That made me very happy. No one at home really felt like eating last week. The heat really does put people off food.

Ingredients

• 16 green bell peppers (if you use fewer, adjust the rice accordingly)

• 1.5 cups of rice

• 3 small red onions

• 2 heaped tablespoons of tomato paste (one for the onions, one for the cooking liquid; you can mix with pepper paste too, if you like)

• 1 heaped teaspoon of granulated sugar

• 1 small tea glass of olive oil (half for the onions, half for the liquid)

• 4 medium-sized tomatoes (2 grated, 2 sliced for the tops)

• Juice of half a lemon

• 1 heaped teaspoon of dried mint

• 1 teaspoon black pepper

• 1 teaspoon salt

• 1 teaspoon ground cinnamon

• 1/3 cup hot water

From what I’ve learned, especially from the brilliant home cooks on Instagram, cinnamon and lemon juice together really make a great flavour pairing. I’ll let you know exactly when to add them. And in the end, the result is a stuffed pepper dish that smells, tastes and feels, almost everything, just right to me.

###Method

The first thing to do is rinse the rice thoroughly until the water runs clear. It’s a bit of a process, but totally necessary. Once rinsed, let the rice soak in hot water for about 15 minutes. While that’s happening, you can start preparing the peppers by cleaning and rinsing them. You can also get the other ingredients ready in the meantime.

When the soaking time is up, drain the rice and let it sit while we move on to the cooking part.

Start by gently frying the onions in half of the olive oil. Once they soften, add one tablespoon of tomato paste and cook it down a little before adding the rice. The reason we add grated tomato later here is to prevent the rice filling from drying out, today we’re tackling the classic problem of dry dolma filling 😂

After the rice is added, mix in the spices, the grated tomato, and the hot water. The goal here isn't to fully cook the rice, just to keep it a little moist. Stir well and cook for another 2–3 minutes. I did all of this on the largest hob over medium heat, not too high, not too low.

Once the filling is ready, I transferred it to another bowl to cool down. I also used the break as a chance to sit down and rest a bit. This is a great moment for a breather if you’ve got other things to do around the house.

Once the filling has cooled down, it’s time to stuff the peppers and arrange them in the pot. If your pot is large like mine and there are gaps, you can fill the empty spaces with potatoes. I used one large and one small potato to plug the gaps.

When it’s time to cook, mix one tablespoon of tomato paste, the remaining olive oil, lemon juice, and enough boiling water to come halfway up the pot. Mixing this separately helps dissolve the tomato paste fully and avoids lumps.

Then, pour the mixture into the pot from the edge and place a plate on top of the peppers to keep them in place while cooking. I really need to get a plate that actually fits this pot, everything I have is either too big or too small. It does the job, but I could definitely upgrade.

Most people say to cook until all the water is absorbed, but for me, 30 minutes was perfect. The rice was lovely and soft, and the peppers turned a beautiful autumn green.

Another dish gone before I even managed to take a proper photo... But I suppose that’s a good sign 😂 Also, from the moment I started sautéing the rice, the smell was incredible, and it got even better once it was fully cooked. I think the cinnamon played a huge role in that. It wasn’t sweet at all, just beautifully aromatic. I reckon the lemon juice balanced it out perfectly. I couldn’t even taste the sugar. And because the liquid hadn’t fully evaporated, the sauce had a lovely consistency.

I think this is how I’ll be making dolma from now on. It turned out beautifully and everyone loved it. I’m really happy with the little tricks I’ve learned. Honestly, what would I do without these amazing home cooks online? Everything I know is thanks to them.

Umarım iyisinizdir ya da iyi olmaya çalışıyorsunuzdur. Ben biraz daha iyiyim. Her geçen gün beni yıpratan şeyler yaşasam da yoluma bakmaya çalışıyorum ama bu amaçsız kalınmışlık beni bitiriyor. Çok huzursuz hissediyorum, sanki her an çok kötü bir şey olacakmış gibi.

Benim durumumu bir kenara bırakmak gerekiyor çünkü evde beslemem gereken 3 boğaz var. Bu yüzden de evde kalanları kullanma, elimden geldiğince tasarruf etme düşüncesini devam ettirdiğim için de biraz evdekilere baktım ve sadece ekstra domates satın alarak dolma biber yapmaya karar verdim. Bunları yaklaşık 2 hafta önce pazardan almıştım ve hâlâ sapasağlam duruyorlardı. Buna çok sevindim. Geçtiğimiz haftalarda evde kimsenin yemek yiyesi gelmedi. Sıcaklar böyle yapıyor gerçekten de.

Malzemeler

• 16 adet (daha az kullanacaksanız pirinci ona göre ayarlamak gerekebilir) dolmalık biber

• 1,5 cup pirinç

• 3 adet küçük boy kırmızı soğan

• 2 dolu yemek kaşığı domates salçası (biri soğan diğeri suyu için)(isterseniz biber salçası ile de oranlayabilirsiniz)

• 1 tepeleme tatlı kaşığı toz şeker

• 1 çay bardağı zeytin yağı (yarısı soğan ile, diğer yarısı suyuna)

• 4 orta boy domates (2 tanesi rende, 2 tanesi ise üzerine)

• Yarım limonun suyu

• 1 tepeleme tatlı kaşığı kuru nane

• 1 çay kaşığı karabiber

• 1 tatlı kaşığı tuz

• 1 çay kaşıpı tarçın

• 1/3 su bardağı sıcak su

Öğrendiğim şeylere göre, en azından Instagram'daki ev hanımlarının paylaştığı güzel içeriklere göre, tarçın ile limon suyu da harika bir içerik yaratabiliyormuş. Bu malzemeleri de nerede eklemeniz gerektiğini söyleyeceğim elbette ve ortaya çıkan sonuçta kokusu, tadı ve dokusu, hatta neredeyse her şeyiyle benim için mükemmel bir biber dolması ortaya çıkacak.

Hazırlanışı

İlk önce yapılması gereken pirinci yıkadığınız su berrak olana kadar yıkamak. Bu çok zorlu bir süreç fakat gerekli de. Bunu yaptıktan sonra pirinci sıcak suda 15 dakika kadar bekletmek önemli. Bu süreçte ise isterseniz biberlerinizi ayıklayıp yıkayabilirsiniz. Ayrıca hazırlanması gereken malzemeleri de hazırlayabilirsiniz.

Pirincin bekleme süresi dolduğunda sudan çıkarıp süzülmesini beklerken biz pişirme bölümüne başlayacağız.

İlk önce yarım çay bardağı zeytin yağında soğanları kavurduktan sonra içerisine salçayı ekleyip bir süre kavurduktan sonra içerisine pirinci de eklemek gerekiyor. Bu süreçte domates rendesini eklememizin sebebi dolma biber içinin kurumasını engellemek. Genel içi kuru olan biberler üzerine çalışıyoruz bugün 😂

Pirinci ekledikten sonra içerisine baharatları, rendelenmiş domatesi ve sıcak suyu eklemek gerekiyor. Amaç burada pirinçleri pişirmek değil biraz daha nemli kalmasını sağlamak. Tabii ekledikten sonra karıştırarak 2-3 dakika daha pişirmek gerekiyor. Ben bu işlemlerin hepsini en büyük gözdeki orta ateşte yaptım. Ne yüksek ateş verdim, ne de çok kıstım.

Hazırladığımız pirinci başka bir kaba alarak soğuması kolaştırdım ve biraz oturabilmek için odama çekildim. Bu kısımda tabii yapacak başka bir işiniz varsa harika bir mola hâline geliyor.

İç harç soğuduktan sonra pirinci biberlerin içerisine doldurup tencereye dizmek gerekiyor. Eğer tencereniz benimki gibi büyükse ve boşluk kalıyorsa içerisine patates dizebilirsiniz. Ben biri büyük biri küçük iki patatesi içerisinde boşluk kalan kısımlara yerleştirdim.

Pişirme zamanı geldiğinde ise bir yemek kaşığı salçayı, kalan zeytin yağını, limon suyunu ve tencerenin yarısına denk gelecek kadar kaynar suyu başka bir kapta karıştırdım. Bu bana salçayı eritebilmem için fırsat verdi ve topaklanmayı da önledi.

Geri kalanı ise klasik olarak kenarından döktüğümüz su ve üzerine biberler yıkılmasın diye koyduğumuz tabak. Aslında sırf bu tencereye uygun bir tabak alacağım çünkü evdekiler ya çok büyük ya da böyle küçük kalıyor. İşimi görüyor elbette ama biraz daha iyi bir seçim yapabilirim.

Pişirme süresi ise genelde su tamamen çekilene kadar diyorlar fakat benim için 30 dakika kadar bir süre yeterli oldu. Pirinçler yumuşacık, biberler ise sonbahar yeşiline yakın bir renkteydi.

Bir yemek daha ben fotoğrafını çekemeden bitti... Bu da iyi olmuş demek sanırım 😂 Ayrıca pirinci kavurduğumdan beri ortaya çıkan harika koku, piştikten sonra daha da güzelleşti. Sanırım bunda tarçının etkisi çok büyük ve hiç de tahmin ettiğim gibi tatlı olmadı. Sanırım bu limonun marifeti. Şeker ise hiç hissedilmiyordu. Tam tersine yemeğin suyu çekilmediğinden dolayı olan su harika bir kıvamdaydı.

Sanırım bundan sonra ben dolma biberi bu şekilde yapacağım. Harika bir şey ortaya çıktı ve herkes sevdi. Ben bu öğrendiğim yeni tüyolardan memnun kaldım. Ah bu ev hanımları olmasa ben nasıl yemek yapardım? Her şey onların sayesinde.
