Mangaon ta!
One of my favorite bisaya wordwould be "Mangaon ta!" Well it might be a part of a Filipino tradition to invite someone to eat whenever you are eating. Whether you know the person or not it is a kind of respect. Today I wanna share a recipe I really tried to master cooking this dish since its my husbands favorite and my kids too. But honestly its not that perfect yet but its delicious.
This Visayan version of adobo is easy to make and sure to be a family favorite.
Let's cook humba!!
One important aspect of cooking humba is time. Humba is a dish of tender pork, salted black beans, and an assortment of spices. With its deep flavor palate and numerous ingredients, it is the perfect combination of sweet and savory two such flavors that Filipinos adore.
Ingredients
Pork belly (Boiled)
Oyster sauce
Soy sauce
Vinegar
Dried bay leaves
Peppercorn
Brown sugar
Sliced Onion
Sliced potato
Boiled egg
Note: You may include fermented black beans and banana blossoms. But since I don't have it I didn't include it.
Procedure
- First thing to do is sautee the onion, I added the pork but beforehand I boiled it with water for an hour. So it is tender when I added the other ingredients.Wait till the pork belly turns brown. Cook low and slow to allow the fat to absorb the flavor.
- Sautee the pork and add the pork broth from the water you used in boiling the pork meat a while ago. I also added sliced potatoes.
- Add oyster sauce, vinegar and soy sauce for taste. I actually also added sugar for a sweet taste. Humba is actually a blend of sweet and salty taste.Use brown sugar and not white to sweeten the dish. It has a slightly less concentrated sweetness.
- Then I added my kids favorite, boiled egg. You may boil the egg in advance together with the pork. Adding boiled egg make your humba extra special.While you can combine everything together in one step, take the extra effort of browning the pork belly. Searing over high heat caramelizes the surface of the meat.
- Mix and wait for the sauce to absorb and then you are now ready to serve.Transfer to a serving plate and serve. Share and enjoy!
